- Ducana/Duckna is a sweet potato pudding type dish. It is made from grated sweet potatoes, grated coconut, sugar, flour, ginger, grated nutmeg, salt and essence or vanilla extract. Traditionally we have ducana and saltfish as one of our main dishes on Good Friday.

This look so similar to the Jamaican ones but we use corn meal instead of sweet potato , the sweet potatoes we make a sweet potato pudding
