Excellent video with great material and pretty visuals! ❤
On the point number 1, learnt something new as I have always been doing the opposite; as soon as rice is cooked put in serving plate and add ghee to it. The thought of reheating bothered me but need to think about the resistant starch from rice that you mention with its excellent health benefits.
On the 2nd point on fermentation of rice, "paanta bhaat" in the eastern states is time-tested even in the telugu-speaking states where it is called "taravvani annam". Here "taravvani" means fermented water and "annam" means rice. The fermentation in the taravaani annam is perpetually maintained in a home in a mud pot from left-over rice added (and consumed) with the water especially cooling in the hot summer months (and this you mention in your video). Modern lifestyle gotten away from this practice but what you show in the video is relatively easy to do when there is leftover rice.
The third point of adding protein and fiber to rice is widespread. Protein such as beans with rice comes under various names, "raajma-chaval" in North India, "pappu-annam" (telugu), beans+rice popular in South America.
    🙏

This video was not just useful, but an eye opener for me! I had heard about cooked rice being cooled before consuming but nobody talked about whether we could reheat or not. Thank you very much Nirupama.

Beautiful! I've been as of late, rinsing my rice before i cook it. Along with and will probably do this more often going forward upon planning my meals, refrigerating and reheating when needed for the next days consumption. Thank you for your videos! 🍚

thank U 4 your perspective/education of preparation/consumption of rice. I love to cook rice with spices added. I mix in steamed/or lightly sauteed vegetables, with a bit of soy. However, I like to consume a lot in one sitting. Without eating anything more. It always feels rewarding. I'll try fermentation. What about other types of rice? I haven't consumed basmati rice in a while. I always thought it was a more rewarding rice. What about brown rice? The glycemic index and the fact that I now know it's a grain concern ME....help ....

Perhaps re-heating would be necessary coz I remember some nutritionist say that bacteria starts building up in rice faster... Panta Bhaat is a good idea...
