Hello, usually I use bread flour (T65). But it actually depends on the texture you target. For instance when I make french cruller, I use T45 atelierlalune.com/2018/06/french-cruller/

wa's Kitchen That’s insightful. 🤔 I wanted a light airy texture. But crispy from the outside. I use yeast in my recipe of donuts. So I was confused which one to consider. After all the research, I think T65 is only for artisan breads. Please guide me or correct me if I’m wrong. 🙂 So would T55 be good?

I agree if you want a lighter texture you should avoid T65. Maybe even why not use T45?
