    Should you, or can you, make ahead and refrigerate the beets/sour cream? If so, should you let it come back to room temp before serving on top the hot greens?

    So you don't really say how much of the garlic goes into the greens and how much it goes into the sour cream mixture. I'll look on the website and I can't find the recipe at all.

    Can the sour cream be substituted with yogurt?

      Yes, you can sub sour cream. Try to get the kind of sour cream that has the most probiotics in it.

    Being a Cretan dish, it seems odd to use sour cream in lieu of yogurt?

      Well, they have sour cream there as well, but you can use either.

      ​@@Mediterraneanliving BTW, the stems are also edible as well! Just sauteed them in olive oil with some fresh garlic.
