      I think he wasted a ton of white meat by cutting out a strip, you could simply cut the red off the surface, it isn't thick. He is doing it the "commercial" way, they have a lot of fish and don't give a damn.

    another tip is to leave the tail attached to the fillet just a little bit. so it holds it when skinning the fillet works better on smaller bass

    Bleeding the fish takes a lot of that dark red out.

    thank goodness for the new size slots. If people actually understood how depleted the striped bass stocks had gotten they'd never have kept these big fish in the first place.

    Keep the fish at the edge of the table. Your hand will be out in mid air. Why bust your knuckles on the table top ? First cut.... across the throat helps to loosen things up for the rest of the cuts.

    I usually toss them back but was thinking of trying 1, does the red meat make decent bait seems a waste to throw it out?

      Does not bother me either, i think much of that theory is overrated. Ive had fish tasting fish and that meat is not one of them

    Wait. People don't like fishy taste... but want to eat fish... if you're going to waste that much meat, just throw them back and go to unseasoned chicken.

    Why do so many videos waste the belly portion of a striped bass?
    Don't they have the skill to trim the ribs nicely?
    Amateur skills disappoint me.

    Hey Mustad, if you care to stay in business on the East Coast I recommend you don’t promote people killing 40”+ striped bass. Have you seen the recent reports? That fish has no business being kept, Charter Captains need to take responsibility with recreational guys and inform their clients of the situation. If not, they need to put in a slot on these fish.

      Keeping the populations healthy and following regulations are very important to us. The limits for this size fish in New York, where it was caught, are one fish over 28 inches. In the north of the George Washington Bridge on the Hudson, there are also restrictions protecting fish between 29-39 inches. This is because females are most commonly spawning in this range, which is why this slot is protected as of 2015. Over 40 inches, Striped Bass spawn significantly less. Both the size and amount restrictions have been adjusted to help keep the populations healthy for future generations. The purpose of this video is to share the process of filleting the one permitted fish properly for consuming.

      we have restrictions now in NY slot size is between 28-35 inches
