I think he wasted a ton of white meat by cutting out a strip, you could simply cut the red off the surface, it isn't thick. He is doing it the "commercial" way, they have a lot of fish and don't give a damn.

That fish has no business being kept, Charter Captains need to take responsibility with recreational guys and inform their clients of the situation. If not, they need to put in a slot on these fish.

another tip is to leave the tail attached to the fillet just a little bit. so it holds it when skinning the fillet works better on smaller bass
Bleeding the fish takes a lot of that dark red out.
