I love your recipes. You can also chill or freeze the butter and grate it instead of cutting it up from chunks. That is an easy way to integrate butter and flour.

These do look quite good, Kim! I’ve got a jumbo muffin pan that rarely gets used because I never run across any gf muffin recipes where the instructions state to bake in the jumbo pan. I’m reluctant to try that pan if the instructions don’t warrant it. So I’m very excited to try your recipe! Hi Kim! I’m new to your channel and loving it! I think your videos are very well done and your recipes are well written. I made these muffins yesterday and noticed your recipe says that 3 cups of flour is 420 grams. I thought that seemed a bit much. Checking online 3 cups of flour is 375 grams. I quickly adjusted the flour. The muffins came out great! However, the batter made 6 jumbo muffins plus 2 mini loaves. I probably would’ve made 12 jumbo muffins if I had 2 pans. ❤
Hi there! Thanks for the kind words!! 3 cups of my flour equals 420 with each cup weighing 140 grams. Different flours weigh so much differently that it's really best to use weight than volume when baking, especially gf. But I'm glad your muffins still worked 🥰

I have tried several of your recipes, and they are amazing. My daughter loves chocolate chip muffins, and I was wondering if you could substitute chocolate chips for the blueberries.
Yep! I substitute almost double of date sugar with some stevia, melted butter or ghee and I keep the eggs but you can substitute a chia or flax eggs if you want, just make sure the seeds are in powder form, whether you blend them to crush or buy them in powder form. (1 tbsp seed powder and 2 tbsp water= 1 chia/flax egg)
Good question! I think you should be able to use whole milk, but I haven't tested it. I chose nonfat a long time ago mainly because it's easier to find.
Whatvif you wanted to use canned blueberries. I would obviously drain them first but do you think like 1/2 less of buttermilk since the blueberries will be extra juicy?

Yes! I've done it before but never got around to posting the recipe. I would use mini chocolate chips.

I've never seen canned blueberries, so I really don't know if they would work or not.
