I bet you learned a lot of this stuff from elder family members, grandmothers, fathers etc. Their is a high level of authenticity to your food. Those ribs look so delicious & tender. Too bad we cannot get them like that here in South Africa. All we have is thinly sliced short ribs. Always love the side dishes. Keep up the tremendous work big brother.
@@bbqsouthernstyle I doubt it. Those guys are moody as hell. I love roasting half a pig's head that I buy from them. This one time I went to buy it, but they had sliced up the heads and were selling them in trays. I asked one of the guys if they had full heads and if they could hook me up with a half. The guy said they had the full heads, but they don't take special requests. It's like I was calling a religious radio station to ask them to play me a ratchet strip club song.

I think beef ribs are my most favorite cut of meat. Those look marvelous. Would eat those with some bbq baked beans, garlic bread, and slaw.

Great Cook, Do you like using the cast iron better than the stainless steel in the pit barrel
Either one really. The cast iron is easier to get wood in since it is a 4 piece design with removable quadrants.
Are you using a fan? It sounds like a fan is going maybe to help the fire.
Does the silver skin have any use? Do you save it for anything or is it useless across the board?
