I needed pumpkin spice for pumpkin cake, so I tried your recipe. I didn't have ground cloves - not a spice I use much, so I substituted with ground star anise. I also added half a tsp of ground green cardamom, because, well, South Asian 😉 - it's practically the law. Anyway, it was great. Your ratios are spot on, imo. I don't like the overpowering nutmeg flavour in some ready made blends. I've used the spice mix in apple crumble and hot drinks too. It works especially well in chai lattes - the flavours complement tea better than coffee, but that might be just me.
I'm so pleased you were able to make substitutions that worked for you. The green cardamom addition for the latte is interesting and I may be trying that out for myself too:) Thanks for watching and supporting❤️
