I grew up in British beef butcher shops (2 grandfathers and an uncle. I worked in these shops from age 13. For sure this guy is a great butcher and uses an exceptionally sharp knife but I've watched my grandfathers clean up a side of heef in exactly the same way hundreds of times. For sure the guy knows what he's doing but any good british butcher can do the same.
