4 or 5 chapters in and Malfurion has done nothing to actually prepare for the Legion except slightly bolster his forces. His change from caring Druid to dickhead was way to sudden too. Even Arthas took a few missions to start butting heads with his friends and subordinates, where Malfurion immediately changed. There was literally no reason for him to kill that druid like that either, it's just a set piece to sell how much he's changed. There also shouldn't be off duty Sentinels if they're under attack, all hands on deck when your home is under siege. And we've yet to know where these Highbourne came from, Legion had only barely begun when he first released this so they can't be Nightbourne, and the High Elves have diverged from them, so who the hell are these people?
I think Malfurion changed so quickly because he drank the cursed water from the fountain and that corrupted him quickly, while Arthas's own personality traits led to conflict before he took up Frostmourne. But also, Malfurion's Quest is one single campaign done by a modder with a day job, how do you expect it to be fully explained with a storyline and worldbuilding that competes with professionals?
Well, if you think about it, Arthas' last moment where he completely diverged from good was when he took up Frostmourne, at the end of his campaign. Meanwhile, Malfurion had his "take up a dark power" moment much earlier. Malfurion's quest is less about the journey to corruption and more about the depths of depravity Furion reaches while claiming it's for "fighting the legion". One thing to take into account is that the change in Furion's behaviour changes drastically after consuming the second fountain. Before, he tries allying with ancients and remains somewhat himself. After, he slaughters furbolgs and elves freely, and the "inner voice" that tempted him has faded, either because it's no longer necessary, or because it's now indistinguishable from his own thoughts. As for the Highbourne's origin, I can't remember where in the early chapters, but I believe it is implied they were night elves nostalgic about arcane powers, much like the ones Malfurion recruits this chapter. Only they became highborne by encountering the fountains (or Illidan but which doesn't really matter)

The old Horde also only really had a sole leader for the longest time: Gul'dan until he abandoned Doomhammer, then Doomhammer afterwards. Your logic is flawed.

in original RoC script when they had 6 heroes per faction, Keeper of the Grove and Priestess Heroes would be the good guys while Arch Druid (Furion model) and Demon Hunters would be on the bad/evil side society wise, Mountain Giants were also Heroes in the original concept but were scrapped after Abomination Hero got axed for Scourge.
This comically evil Malfurion is the TRUE reason Furion became MALfurion. I literally laughed at just how big of a dickhead he has become in such a short period. Truly puts Arthas to shame.

Also, you've gotta take into account the fact that it's quite easy to give up on magic so you don't get exiled. But then you have to live 10 000 years remembering what arcane was like knowing you'll never taste it again. That breeds quite a bit of nostalgia.
It's too on the nose and too sudden a change for me. I'd have preferred to see the change happen more gradually over the course of a few missions, similar to Arthas

I trust you." Then continuing with current dialogue.
At this point I hope that the Bitc- I mean Death Knight Arthas kills This Malfurion. Just to tell him that it was easier than he imagined and all what was needed was one Specter to whisper to him at some times of Doubt
