Hi Flo, I am all for trying different low carb fufu options but I am sensitive to smells of the foods I eat. They say "the nose eats before the mouth" and in my case this is true. Does this tigernut fufu have a strange smell? I watched your cabbage fufu and I know that cooked cabbage does not smell pleasant. I have never tasted Akpu (cassava fufu) before because if it's awful smell I remember when grow up. So please tell us the smell as well as the texture when demonstrating this "fufu week" thanks. 😂
Nikky udoye I know what you mean. 😂🤣😂 Akpu ooo! Tigernuts fufu does not smell. The milk smells good anyway and even if it will smell, it will be a nice smell not akpu-like smell. 😂 But once the milk is removed, we are left with no smell. Cabbage fufu is the one that has that kind of smell that may put someone off even after discarding the water. You can try cauliflower fufu (coming up next) which is similar to cabbage fufu but does not smell.
All Nigerian Recipes Thanks Flo, I like eating cauliflower rice as it is bland does not detract from the taste of the sauce and has no off putting smell. So that maybe a better option for me instead of cabbage.😄

Lisa yes. 👍👍 One thing to note is that the classic fufu meals are made with starchy vegetables which contain enough carbs to form the dough on their own eg yam, plantain, cocoyam, cassava etc. But with the recent low carb fufu series, we are delving into non-starchy vegetables like cabbage, carrots, eggplant etc and forcing them to form a dough by using these binders. We do not add binders to the classic Nigerian fufu meals. These low carb versions came about as a result of low carb fufu meals requests I was getting from those who want to reduce the carbs in their diet. I hope this makes sense.

I normally add small oat meal to my coconut flour or tigernut flour when doing it, and it comes out well. Bravo

Yes, just mix with a binder like plantain flour, cassava flour, psy husk, semi etc.
