Chopping into smaller pieces and blending takes more time Aunt Flo, you can cut in larger cubes, Put in boiling water and cook for 4 to 5minutes then blend it without water(for a much firmer/harder consistency). If you prefer a much lighter/softer consistency like myself, add some of the eggplant stock into the blender....it blends very smoothly as it's cooked and so soft and mushy ...no need to sieve in a cheese cloth or napkin. Pour back into the pot, add your spoonful of psyllium husk and stir until it's formed. Try my method Aunt Flo and let me know if you like it. It's a much softer and finer texture just like amala itself

I did not like that method because it made the eggplant fufu tooooo soft for me. I couldn't even mold it. Also, I used physics to calculate that to and fro journey from pot > blender > back to pot and it was much more stressful for me than a single journey from blender > pot. LOL

Then they are washed (sometimes squeezed if you are going to fry them) and patted dry before making baba ganoush or parmigiana. I will try this both ways and tell you if there is a difference. Same thought as you. Most of the nutrients in the cabbage was lost with the juice! With this one much of the nutrients are retained.
