I make this for thanksgiving because i'm vegan. it's a delicious recipe and it's got aesthetic qualities so it's perfect for impressing guest. First time i made it, i was impatient and didn't wait long enough for the mushrooms to cook or for it too cool down out of the oven so it came out soggier and didn't cut well. Second time i was patient and it came out beautifully. I upped some of the spices and i go heavier on garlic.

Made this beautiful recipe today. Oh so delicious! But I must admit, I messed up on the Puff Pastry. I left it out after it defrosted & it got warm. When I rolled it out, I rolled it out too thin. My bad. :( Can't wait to make it again, the right way. :) But it sure does taste YUMMY! BTW, I gave an "end piece" to my neighbor. She love it! Cheers!

I made this today. It turned out awesome. The store was out of Water Chestnuts so I used Walnuts. They were also out of the normal puff pastry dough but had puff pastry shells so I made those. It still turned out great!
This mushroom Wellington is certainly a winner. Made it for Easter dinner and am preparing it for a summer party tomorrow since most of my guests are vegetarians. Super delicious
Hi! I haven't tried it, but I imagine it can be done! I would assemble the Wellington and then wrap it in several layers of plastic wrap before placing in the freezer. (Do not bake it before freezing). When you're ready for it, allow it to thaw unwrapped on a baking sheet at room temp for about an hour before placing in the oven to bake. Please let me know if you try it! :)
This looks amazing, but the thought of flipping over the pastry scares me. Couldn't I just decorate over the seam? Or is there a reason it has to be on the bottom? Thanks!

That's considerate, I've been to dinners that have no vegan options because I've been told that there's no point in cooking food that one person will eat. I'm usually prepared to bring my own food.

FYI = You don't need to use oil to saute ... water works just as well and it doesn't add to the calories of the dish.
A few drops of water on metal baking sheet makes paper lay flat.
That's not a Wellington it's just a pie. To be a Wellington the mushroom and pastry has to surround something else.
what puff pastry is used to make this Vegan, usually puff pastry is made with butter
Pepperidge farms puff pastry is vegan
Crazy enough, most commercial brands use oil now instead of butter. It's cheaper!
