Why does everyone assume all vegans/vegetarians are into nut roasts? I recently went to a Christmas dinner at a pub with our local MINI owners club. As a vegan I wasn't catered for whilst everyone else had a carvery, I got to have 3 roast potatoes which hadn't been cooked in animal fat but were disgustingly salty, and they bought me a little bowl of veg that hadn't got butter on; so I got 3 wet broccoli florets, maybe half of a medium sized carrot and a few pieces of cabbage. They knew in advance that one of the diners was vegan, they catered for vegetarians with a cottage pie but for me, they just put some veg aside and that was it. They didn't even do me any gravy. It would have taken them a couple of minutes to pour boiling water on gravy granules. I ought to have taken some readymade gravy in my drink flask. I have learned one thing and that is to not book myself in for meals and expect anyone to cater for me again. I was charged 11.95 for the tiny portion of one course I was able to have. I would have been better had I not booked a meal and just sat at the bar with a drink and some crisps.

Hi, Amy. You could try these as suggestions - Pumpkin, Spaghetti Squash, Acorn Squash, Hubbard Squash, Buttercup Squash, and Delicata Squash. Hopefully you find something that works for your family member. ^Nicola
You could just use regular potatoes - cube and toss in some oil, salt, pepper, paprika and garlic powder. Then roast for about 20 minutes (or air fry for 15). Cool and add to your mix.

So many of you saying it can only be a wellington if it’s beef 🤦🏻♀️ A beef wellington is called that BECAUSE OF THE PASTRY it’s wrapped in! So yes, a ‘vegan wellington’ is a perfectly acceptable name. You could make a chicken wellington (piece of chicken wrapped in pastry, a mushroom wellington (cooked mushrooms wrapped in pastry) or any other kind of wellington. The wellington part literally just refers to the pastry container. It’s like a big pasty basically. Get over yourselves. Whichever sort you eat, that’s fine, great, good for you. No need to hate on others. This video never told anyone not to eat meat.

You can use quinoa or rice instead. Both will work . Some vegan cheese will bind everything together but you don’t have to use it (but Applewood smoked vegan works brilliantly)

Speaking as a "ferocious carnivore", it did indeed look delicious! Having had my first vegan meal at a very well known vegan restaurant last week, i have to say, i was completely underwhelmed! I prefer a ready-to-buy dish. I had no success making vegan recipes and found failures not getting good results. Wouldn't have a ready-made product?
Jus-Rol puff pastry is vegan. They also do a vegan and GF pastry. But yes, it should have been mentioned!
