- We ended this week with a delicious and crispy fish and chips. The ingredients are listed below.
Suggestion:
* Approximately 150 grams of fish per person.
* You can use 50/50 all purpose flour and rice flour.
* You can use any kind of white fish (cod, haddock, or pollock).
* You can use cold beer or water
Ingredients:
Fish:
4 fillets of white fish (such as cod, haddock, or pollock)
1 cup all-purpose flour
1 cup rice flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper (optional)
1 cup cold beer (lager works well)
Vegetable oil for frying
Aioli:
1 cup mayonnaise
1-2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon lemon zest (optional)
Salt and pepper to taste
1/4 teaspoon Dijon mustard

Can we use corn starch instead of rice flour ? Also, how can I ensure the coating doesn't fall off while starting to fry the fish ? I remember the coating never attached to the fish. Any solutions ??
Yes, you can use corn starch, the main reasons for coating falling off is that coating is not thick enough and oil is not hot enough. You can also buy “self rising flour” that needs only liquid of choice added gradually to get the correct thickness. Hope this helps!
