Pommes Darphin is the Best Hash Browns You'll Ever Eat

- Pommes Darphin is a fancy French way of saying "one the the best hash browns you'll ever eat." In this video, Jeremiah Stone-chef and owner of Contra, Wildair and Una Pizza Napoletana in New York-will show you how to make this fancy French hash brown which also happens to be a classic dish any culinary school grad knows.
Crispy on the outside and hot and creamy in the center, this butter-bathed fried potato dish is cooked to a golden brown and topped with a quick pickle of a jalapeño and onion relish, and then a little "foie gras of the sea"-uni.
You of course can just top these perfect hash browns with a fried egg and call it a day, but if you're feeling a little fancy, this is how you treat yo'self.

Hash Browns are my favorite fruit
Spongebob SquarePants I like the way you think.
And steak is my favorite vegetable.
Hash brown is a crustecean.....
Spongebob SquarePants love it!
The more you eat, the more you toot.
I randomly met this guy last year and he's a legit super nice person
I recoil in horror every time I see that mandolin come out.
Right? PTSD. I still carry the scars...
Always get scared of it too, I use one those cut resistant gloves every time I use a mandoline.
Just use a towel lol
Yeah, me too. You're supposed to use a small plastic attachment with two prongs to hold the veg as you use the mandolin.
Looks like a Benriner. I'm still missing the top of my index finger.
I first thought he was trying to say pomme dauphine, then i realised pomme darfin are called pomme paillasson here.
Moi aussi lol I was upset lol
I legit appreciate this weird piece of knowledge. Thanks for the comment!
La même , on en apprend tous les jours 😂
Same lmao I was let down at first
Neat. I didn't know that.
Never Would’ve though uni and hash browns would go together but now i need this in my mouth immediately
I love this episode!!! It’s the best one yet. This dish looks so good. Definitely want to try it out.
Uni on a hash brown? Madness. Magnificent madness.
Going to try to make this, but without the uni. Keeping things budget friendly 😂
Could always get the cheap cavier they sell at walmart. Like 4-6 bucks a bottle
You can top it with some labne (salt some yogurt and let the whey drain out, it gets almost soft cheese like) to get the creamy hit the uni provides. And then some budget walmart caviar for the briny component. Or even cheaper, capers.
Top it with sour cream, cheese, bacon bits and chives.
Or maybe roasted cheery tomatoes and balsamic vinegar, olive oil and salt
@@Stegull Oooh the capers + labneh sounds like a great combo. Smoked salmon might be a decent replacement for the uni as well, as it would have the brininess.
I'm just gonna use unni but instead of jalapenos in gonna use octopus
Such a great potato recipe, and there is always room for more potato recipes
I finally realized how to properly use a mandolin. I've always been so scared of mine and used the guard when my fingers got too close the the blade. That hand placement at 3:32 has the be the move to avoid losing parts of my fingers.
Thanks Jeremiah!!
He’s said potato so many times, that it doesn’t sound like a word anymore.
Potato potato po tato potato pota to po tatopo ta topota topotato potato potato potato potatopota topo tatopotatopota topo tatopota to potato potato
Enkightened regarding the hash browns. Thank you!
I would love to try this dish
I'm absolutely *nuts* for this dish
This guy is so skilled🤩🤩🤩
Looks good
Sure I’ll just use some leftover sea urchin from the fridge
Who made the audio at 2:05?! 😋
Lol, even I was like wtf!
His Hash Brown is immaculate by the way
🥔👌
"I was a picky kid"
*makes a dish with sea urchin gonads*
Crazy how people develop as they age
He's so picky that he ditched cheese for sea urchin testicles
hahah right ?
Hilarious yo 🤣
@@RudraDirtTrails hella funny 😆🤝🏻😂
Beautiful knife!
That giant potato disc would be good with either some syrup, sour cream, salsa, or ketchup. That's the beauty of potatoes. So versatile.
Red Judas you literally listed the worst condiments.
@@ChandlerRossBing Potato hash browns get eaten with Ketchup or salsa all the time. Personally I'd just load it up with some scrambled eggs (the creamy kind with very small curds, not the american kind), some hot sauce, and maybe some protein if I feel like being a fatass or need to skip lunch
Ketchup is the best
Some guac and hot sauce.
That looks sooooooo gooooooodddd
I'd love one plain
best hash browns for people who like uni no thank you but the hash browns part looks incredible
This reminds me of Rosti, at least the potato part. Looks delicious
Could you make every potato dish you've ever learned for the entertainment of myself? Thank you.
Whats the knive brand of that knive he uses?
What a true comrade
He’s great
Can tell from the shape , he ate thousand plus Potatoes

Go to Contra, you wont care what the chef looks like after you're done.
I want some
OMG!! Just what I need right now
Good god, where can I get that beautiful knife?
Nice.
first hash brown recipe i've seen in a while where they don't suggest rinsing the starch off the cut potatoes first.
Yeah I was wondering why he did that
RUclips is for entertainment, not education.
Cuz' if you wash the starch off, the potato strands won't stick together...ruclips.net/video/Kyiv0BE7Dcs/видео.html
The potatoes will stick easily with the starch
it's not hash brown, you need the starch.
Potatoes Potatos 👍💜💕🍟🍟
I love brown hash
We did these as sides at BLT steak, Waikiki. Minus the Uni....
Is that like the Renault my dad had as his first car in '68?
aka Rösti
KampKarl Den most swenglish kommentaren jag ever läst
Ive had rosti in Zurich a number of times. Yum!
I’m not sure how to pronounce this decidedly European-looking word, so I think I’m just going to call it a “roasty” until I learn how to say it properly.
@@deadfr0g nah its more like rusty american pronounced exept that the r is longer and less american. the shape of your mouth is more closed.
Schwiiiz
Every time he says pommes darphin a hipster gets his glasses
🤓 Thanks, Chef!
Every time he says pommes darphin, eat an avocado toast.
I'll eat anything with uni on it
Ya'll need to learn the ways of the Raggmunk.
I read dolphin and almost cried
God, I don’t like the sound of that at all!
Thankfully, only mollusk gonads are being eaten here.
I have some dolphin in my freezer. My roomie from Labrador brought it after visiting home lol.
thanks a gazillion for measuring by weight....hopefully your influence spreads to your colleagues
"i did not eat vegetables, I only had potatoes" think about that one for a second
Smaller portion please
so what's the difference between kosher and normal salt?
Any else notice the background music starting at 0:58? If you know Jamie from sortedfood you’ll get it!! 😅
05:00 there’s no way in hell I’m not pressing that, Aggressively!
Audio from 3:19, how is it
“McDonalds colour”. So those are today’s cooking standards. 😂😂😉
It’s totally funny in context here, but what’s a little bit crazy is it’s also a colour that we can probably all immediately recall quite vividly... which actually makes it a pretty helpful shorthand for communicating a very specific level of “toastedness” to others that we can trust they will be able to identify (and hopefully replicate) for themselves with a surprising degree of accuracy.
If I try making this recipe later, I know I am NOT going to have to check back in with this video to see if I’ve cooked my potatoes enough. I’ll just know.
Sort of interesting.
You’re totally right, though. When he said it, I laughed out loud.
*Crusty golden hashbrown* 😋
Yum would love to use Szechuan pepper instead of ordinary black pepper
the original is called "Rösti", but that looks quite delicious as well
I would say that they're two different things. Rösti isn't the original of pommes darphin. And vice versa. We in Sweden got what's closer to rösti than what pommes darphin is. Hard to say just which dish that came first.
I think I just witnessed breakfast sacrilege
what is that knife he is using though??! anybody?
Anybody...i need this in my life....
I think I found it. I've got a 10-inch classic chef's knife from Shun and while I know a lot of actual chefs don't prefer them since they're apparently pretty fragile, it's still a crazy sharp knife and I love it.

Hola.. saludos
Why use a mandolin to cut it flat, then julienne the slices? Isn't there a setting on the mandolin to already do that?
I did the same thing as he did as a child
Sea urchin, I’ve got those in my backyard
Reminds me of Swiss "rösti".
mcdonalds color 😂 fking love it
I bet this is delicious but i'm saving that $ea urchin for something a little more delicate than a hashbrown lol.
He did not soak the potato in water to release the starch. Is that okay? Cause I wanna try it out (without the sea urchin ofc)
Pro trip. Use the guard for the mandolin. In saving the tips of your fingers or thumb.
So I'm gonna do the same thing but gonna sub out the relish and urchin and go with fried eggs and hot sauce
Can anyone explain to me why they call it Hashbrowns in the US?
Hash browns are my favourite website. It even has a oily vpn.
I like him
Gimme gimme gimme
I would rather eat pommes Dauphines
completely different, 1 is a roesti and the other is a mix of choux pastry and mashed potato
i would replace the sea urchin with bacon :P
If you don't have bacon you can also replace it with no
So does he skip the rinsing of the potatoes to wash off excess starch or what?
Mandolines makes me nervous.
9/10 would microwave it for 1 min after frying, as they wouldn't trust it's cooked in the inside
I haven't seen this yet but idkkkk McDonald's are pretttttty good
Boy I thought that was two pieces of fried cat fish on top
Rosti?
❤️❤️❤️
🙌🏾🙌🏾
Starts at 2:30
Where the hell am I supposed to find that much sea urchin
You can buy them like that but it will cost you.
funfact theres no need to peel potatos since they are a rootvegetable meaning that it isnt exposed to chemicals the same way as a fruit or anything aboveground would be(obviously only if irresponsibly sprayed with insecticides/pesticides..so grow your own:)). you can adapt that to all roots/rootvegetables.
You sure about the name of the video?
I'm sorry but as a chef, this guy has a long ways to go. Great job tho! Keep it up!!
I know. He only has 3 restaurants, best new chef from food and wine and a Michelin star.
JD Cooks he’s clearly respected. 20+ years of excessively watching chefs and cooking and this recipe doesn’t seem to match up well. Pickled veg, uni, and kind of crispy potatoes 🤷🏼♂️
Like a spanish tortilla basically
Chelsea Goodall fuck Spain
Did anyone first read darphin as dolphin or is it just me?
Latkes
Well, one giant super latke anyway. The potato without the topping is a great(or grate?) Idea for next chanukah and something different for Passover.
Dude should know that a potato is a vegetable.
0:08
Isn't potatoes a vegetable?
I think that starchy tubers are considered a different class in terms of cooking and nutrition.
Is letztlich Geschmackssache.
Wieso kommentiert man deutsch unter so einem video? Verhältnisweise erreicht man halt kaum wen damit (/^▽^)/
@@KimjongILL1941 Is that so? Huh....Bummer. I appreciate YOUR concern about MY business, Ricecake😂. So, according to you, people are not capable of dealing with a piece of german language? Oh, ok.
