Pommes Darphin is the Best Hash Browns You'll Ever Eat

  • Pommes Darphin is a fancy French way of saying "one the the best hash browns you'll ever eat." In this video, Jeremiah Stone-chef and owner of Contra, Wildair and Una Pizza Napoletana in New York-will show you how to make this fancy French hash brown which also happens to be a classic dish any culinary school grad knows.
    Crispy on the outside and hot and creamy in the center, this butter-bathed fried potato dish is cooked to a golden brown and topped with a quick pickle of a jalapeño and onion relish, and then a little "foie gras of the sea"-uni.
    You of course can just top these perfect hash browns with a fried egg and call it a day, but if you're feeling a little fancy, this is how you treat yo'self.

      Always get scared of it too, I use one those cut resistant gloves every time I use a mandoline.

      Yeah, me too. You're supposed to use a small plastic attachment with two prongs to hold the veg as you use the mandolin.

      You can top it with some labne (salt some yogurt and let the whey drain out, it gets almost soft cheese like) to get the creamy hit the uni provides. And then some budget walmart caviar for the briny component. Or even cheaper, capers.

      Top it with sour cream, cheese, bacon bits and chives.
      Or maybe roasted cheery tomatoes and balsamic vinegar, olive oil and salt

    I finally realized how to properly use a mandolin. I've always been so scared of mine and used the guard when my fingers got too close the the blade. That hand placement at 3:32 has the be the move to avoid losing parts of my fingers.

    That giant potato disc would be good with either some syrup, sour cream, salsa, or ketchup. That's the beauty of potatoes. So versatile.

      @@ChandlerRossBing Potato hash browns get eaten with Ketchup or salsa all the time. Personally I'd just load it up with some scrambled eggs (the creamy kind with very small curds, not the american kind), some hot sauce, and maybe some protein if I feel like being a fatass or need to skip lunch

      It’s totally funny in context here, but what’s a little bit crazy is it’s also a colour that we can probably all immediately recall quite vividly... which actually makes it a pretty helpful shorthand for communicating a very specific level of “toastedness” to others that we can trust they will be able to identify (and hopefully replicate) for themselves with a surprising degree of accuracy.
      If I try making this recipe later, I know I am NOT going to have to check back in with this video to see if I’ve cooked my potatoes enough. I’ll just know.
      Sort of interesting.

      I would say that they're two different things. Rösti isn't the original of pommes darphin. And vice versa. We in Sweden got what's closer to rösti than what pommes darphin is. Hard to say just which dish that came first.

      I think I found it. I've got a 10-inch classic chef's knife from Shun and while I know a lot of actual chefs don't prefer them since they're apparently pretty fragile, it's still a crazy sharp knife and I love it.

    funfact theres no need to peel potatos since they are a rootvegetable meaning that it isnt exposed to chemicals the same way as a fruit or anything aboveground would be(obviously only if irresponsibly sprayed with insecticides/pesticides..so grow your own:)). you can adapt that to all roots/rootvegetables.

      JD Cooks he’s clearly respected. 20+ years of excessively watching chefs and cooking and this recipe doesn’t seem to match up well. Pickled veg, uni, and kind of crispy potatoes 🤷🏼‍♂️

    Wie auch immer ers nennen will - honestly, seine Rösti ist zumindest was ich optisch sehen kann auf jeden Fall nahezu perfekt, da hat so manch schweizer Koch hier seine Mühe das so hinzukriegen (obwohl es ja eigentlich ein einfaches Gericht ist. Aber wie auch beim Wiener Schnitzel und anderen Sachen sieht man, dass selbst die einfachsten Gerichte nur gut werden, wenn man sich die Mühe macht, ein bisschen auf Details in der Zubereitung zu achten.) Nur im Vergleich zu ihm würde ich persönlich "Geschwellti" dafür verwenden und keine rohen Kartoffeln. Seine Variante is aber auch ok. Is letztlich Geschmackssache.
