    INGREDIENTS
    4 to 5 lb beef chuck roast
    1 oz pkg Ranch seasoning
    1 oz pkg Au Jus gravy mix
    4 Tbsp unsalted butter
    8 to 10 whole peppercini
    6 quart slow cooker set on high for 5 to 6 hrs

    This is the BEST pot roast. It makes the best gravy for mashed potatoes. My step mom is from Mississippi and we've been making this for years. It's one whole stick of butter in the original recipe. 5 lb Roast, ranch, au jus, butter on top, peppers around and a couple on top. Low for 8 hours. Remove roast and peppers. Drain juices into a saucepan and keep simmering, add 1 cup water plus 2 tbsp corn starch and cook for 5 minutes. Serve with mashed potatoes, it's amazing. We use unsalted butter and add no salt. Because seasoning and peppers are salty. I leave any extra salt up to the diner.

      @PJS just use maybe one or two peppers for flavor and you don’t have to add any of the pepper juice if it might be too spicy for you.

      @PJS Use sliced peppers without the seeds or remove them from the whole pickled pepper and chop. Then use as much of the pickle brine that your stomach can handle.

    I remember when chuck roast was actually affordable. Today, it's a nice luxury when you can find it on sale. I have some in the freezer for when I have time to cook. Thanks for this recipe!

    i made this for christmas dinner and accidentally discovered this pot roast makes EXCELLENT breakfast tacos. just fold in a tortilla with some pico de gallo and trust me, it is DELICIOUS. 10/10 definitely recommend.

    My favorite pot roast! I keep the unsalted butter and a bit of pepper juice but add carrots and potatoes to help absorb and distribute any saltiness. I also add 1/2 cup of low sodium beef broth because more of that delicious gravy is always needed! Mashed potatoes and crusty buttered bread is a must!

    I like to add mushrooms about the last hour of cooking in the crockpot bc this pot roast makes the BEST steak sandwiches! Toast a sub roll lightly, put swiss or provolone or whatever kind of cheese you want & put under the broiler till it's melted & just a little bit of browning, pile the pot roast on the bun & a little drizzle of steak sauce & OMG! IT IS SO GOOD!!! I haven't made a roast any other way since trying this recipe. It's so easy & so good!

    I've made this recipe a couple of times and what I've found is using a small amount of the liquid from the peppers is best like you did, but even better is using Italian dressing mix instead of the ranch dressing mix. That flavor seemed to work better with the pepperonicini juice and peppers.

    I add a 1/2 cup of water to mine and I add baby potatoes and carrots to the bottom and add some brown gravy mix too. And I cook it in the pressure cooker. Done in two hours. Super yummy

    I have made a recipe so similar to this. Instead of using the gravy mix, I used dried onion soup mix. I will definitely try it your way. Love the ideas you come up with.

      I've been making my roast also with the Lipton Soup mix for years, I like the beefy mushroom. I usually throw onions, potatoes & carrots in with mine.

    I have been hearing about this for like 10 years now and STILL haven't made it. I need to finally try it. I love pot roast with buttered bread.
    I think I would have just kept the whole stick of butter because butter is amazing!! It looks really good.

    I made this once about a month ago. 4 lbs beef, whole stick of unsalted butter , and Brown Gravy mix instead of Au Jus , because there were fewer Sodiums listed on the back. Tasted great!

    I love this roast. I sear my roast first. I use a packet of brown gravy instead of au jus. I also don’t use a stick of butter I use half a stick. I add red potatoes and carrots around the roast.

      I dont use butter at all its to greasy and your already getting grease from the fat of the meat. My husband did not like it.

    Yes! I make this occasionally and it's sooooo yummy!!!
    I definitely omit the brine from the peppers and I also sear the meat first before putting it into the crockpot. But everything else is the same and it turns out insanely good!

      Agreed, I'm a big fan of searing meat before braising/cooking it in liquid (I tend to use a pressure cooker rather than a slow cooker for these kinds of recipes - much faster & cooks it better IMO).
      Searing the meat gives the final result a much better look, and at seals in the juices too. If you're not careful and let a slow cooker go too long, you can end up with delicious gravy and tasteless meat - because all its flavour has leeched out into the liquid!

    I like to sear my meat and lay it over a bed of chopped onions. I don’t use the juice from the peppers. I prefer cooking chuck roast on low. Comes out perfect.

    I don't know how many times I've made this roast, and it always turns out fantastic. One little thing I like to do differently is to use the Spicy Ranch Seasoning in place or original; it really brings extra flavor to the dish!

    I love Mississippi Pot Roast! The original recipe called for a whole stick of butter and so I've always made it that way. I didn't bat an eyelash when you put that stick of butter in there because I've been making it that way for 20 years! 😂 I also pour in some of the pepperoncini juice, depending on who'll be eating it since that adds to the spice level so that didn't faze me either! I remember reading somewhere that the earliest version called for a packet of Italian salad dressing mix instead of the ranch. I've always thought I should try that but somehow never do!
    You can also make Mississippi Chicken with 2 lbs of boneless chicken breasts, ranch dressing mix, brown gravy mix and a half stick of butter plus the pepperoncinis. I have no idea why this recipe used only half the butter.
    For less salt on both of these, I've heard that many people just use half the dressing and half the gravy packet and think it tastes the same. You could always make your own, as well, and control the salt, but then it's not 5 ingredient, of course. 😉

      I think it must be an American habit to over-season food, but I must admit it set my teeth on edge to see those mass-produced, chemical-laden ranch dressing and gravy powders thrown over a beautiful piece of quality meat! I would much rather just salt & pepper the meat, and cook it in a simple beef stock.
      In the UK we're cautious when seasoning during the cooking process. Salt and pepper and not much else is our usual habit - we like to taste the flavour of the food, not have it masked with umpteen different herbs and spices (sometimes so many they must be indistinguishable from each other!)
      But my biggest bugbear is all the American recipes that call for a can of chicken or mushroom soup - YUK! I loathe canned soup anyway, and would never eat it, so why would I throw it into a casserole?
      Again, the word 'casserole' has a very different meaning here in the UK than in the US. Here a casserole means a one-pot stew - usually chicken, cooked in stock that will later be thickened to make gravy, plus potatoes, carrots and possibly other veg thrown in and slow cooked or done much faster in a pressure cooker. It's delicious.
      I'm baffled by the American casseroles I've seen, which seem to be a strange mixture of frozen veg and canned soup, thrown into an over-proof dish, with grated cheese thrown over the top. Paula Deen did one on her channel that I wouldn't serve to my dog! That said, I think she's without doubt the worst TV cook of all time. She has no feeling for good food, unlike the wonderful Ina Garten, whose recipes are classy and appetising.

    Soo good Mama. The combination of ranch and gravy seasoning is a Win_ so easy and the roast is amazing. I don't use peppers but add 1/4 c water, a bag of baby carrots and a large or two medium onions cut into 8 wedges. Best thing ever.

    I made this two weeks ago for the first time for my son and I . We live rural and I bought off brand aus jus mix and ranch so I thought that was why ours was so salty, Delicious but to salty. I did add about half a cup of the juice from the peppers and the roast was approx 4 lbs so thank you for helping me figure it out because we do want it again, I served ours on french bread rolls toasted with provolone and mozzarella cheese. Yes! You are right about the house smelling good, It reminded me of being a child and walking into a small Italian sub shop in our town. I love your shows.Blessings.

    I used Italian seasoning mix for Italian roast beef. It works best on low for 8 hours and didn't need the butter.

    I have made mine for years this way from a recipe on Pinterest. I use Lipton beefy onion instead of au jus and the Kerrygold garlic & herb butter, even thought it’s harder to find. I grab a bunch of the butters when I do find them and stick them in the freezer. Straight FIRE every time. The pepperoncinis make it! A winner each and every time! I will try the jus next time, of course waiting for chuck roast to go on sale because inflation 😩

      Do you also use the ranch seasoning pack or just the Lipton beefy onion? I see some folks using the Italian seasoning pack. I may try it that way. Also that kerry gold garlic and herb butter is ELITE. 🔥I use it on everything lol

      A very good suggestion! I have had to cut ingredients down to control both fat and heat, but sodium needs same treatment. We are elderly, and I want flavor, but not so intense.

    I have been making it for years,with a little variation of this. I use one whole stick of butter, one packet of dry Good Seasons Italian dressing mix, 1 or 2 beef bullion (because I never have gravy mix),and only 1 or 2 peppers. Quarter a few red potatoes, add a few baby carrots if you like, and about one cup of water. You will end up with the BEST butter flavored potatoes EVER, and the meat is perfect. Truly a dump and go. Dinner is ready when you get home. Give it a try.

    Love this pot roast, just made it tonight exactly like you did over mashed potatoes! It is so good!! I have been making it since it started trending. I originally used the salted butter but it was too salty. I use unsalted butter and it was much better. All the ingredients have enough salt, even the pepperoncini. I use a whole stick of butter every time. Thanks for the tips

    Best roast ever!! Been making it for several.years now. Only thing I do differently is using 2 gravy mixes. I also add a bit of beef stock. Lol I added one stick.of butter the first time!!! I also flip my roast and cook about 6 hours. We love it! Made it this past weekend and had sandwiches next day and it makes great quesadillas!!!!

    I make this roast a lot . It's fast, east, & delicious. 😋 I actually don't use any butter. The meat has enough fat and flavor. You can't taste the difference.

    I made this today with a beautiful 3.89 lb chuck roast. I did use 9 peppers and a while stick if butter. I drizzled maybe 3-4 t. Of the brine only because I like those peppers. It was perfect not salty at all. I would not put in 1/4 c of brine that would be too salty.
