I just made this for breakfast and it was absolutely delicious. I didn't have any green onions (scallions) so I used white onion. Then, to dress it up for added flavor and visual appeal, added a couple of slices of tomato. Again yummy, thanks!

My mom used to make something like this. She called it Kitchen Sink Eggs, because she would throw in whatever we had. It usually had potato, chicken, green onion and yellow onion, but could have cabbage, zucchini, broccoli, bok choy, spinach - whatever veggies we had in the house. The potatoes would get cooked in butter for a bit, then all the chopped veggies would get added, the heat would go way up to start caramelizing them, then when the eggs and little milk went in the heat would get turned down and a lid would go on it. When the bottom got browned she's flip it, add cheese to the top, cover it and wait for the bottom to brown. Oh man, it was one of my childhood favorites.

That looks really good!! My grandmother use to make an egg and potato pie with French fried potatoes instead of hash browns!! It was one of my favorite meals!! I can't wait to try this.....I love hash browns!!
I have found if you just let the potatoes cook for at least 7 minutes or so undisturbed before turning them over or mixing them, they get much crisper which I think adds more flavor with the egg.

I have been adding two egg yolks to refrigerated "Simply Potatoes" (I think that is the brand), along with salt, pepper, garlic and onion powder, and a few tbs of olive oil. Mix it thoroughly and fry it (I use med-low heat for 6 min on the first side and 5 on the other). It is also great to melt some shredded cheese over it too. It comes out like nicely crisp outside and soft inside hash browns. I squeeze the potatoes in a tea towel but I'd like to try washing to remove the starch as you suggest.

I would rinse the potatoes as you do, but I would then let the starch settle and drain off the water. The starch dries out and can be used for thickening in other recipes.

I make this for breakfast two or three times a week. My wife and I love it. BUT! I'm old and the older I get the more lazy I get. I buy a bag of frozen biscuits and put some in the toaster oven. Mmmm...biscuits and eggs are hard to beat. I buy a bag of frozen hashbrowns and when I'm making this I throw a handful of them into the skillet and let them get done. I also go to Sam's and buy a bag of bacon that is cooked and crumbled. So, a hand full of this bacon goes into the skillet as well. For the two of us, I scramble five eggs and pour them onto the potatoes and bacon. I seldom fix this for lunch, but breakfast is my favorite meal and this works great for breakfast. Quick and easy -- no peeling or grating potatoes or frying bacon. If you're cooking for one, only use two eggs and smaller hands full of hash browns and bacon. Little to wash -- skillet, two plates, a spatula, a couple forks and a coffee cup.
Here is a flipping trick for those of us less dexterously inclined. Simply put a plate over the pan, invert the pan, and slide it off plate to finish in the pan. This is also great for making perfect omlets too.

THEN put them in a hot pan and don’t touch them for 20 minutes. Flip them and cook for 15 minutes more, and don’t touch them. That is how to make crispy hash browns. Been following you for awhile. Thanks for all your videos. Had a problem with this one in that the potatoes were def not cooked. I only used a thin layer of shredded potatoes that had been rinsed and dried. I did manage to roll it up as in your video, but had to cook in microwave twice to get the potatoes to a point where it was not raw. I think next time I will have some par boiled potato ready. We are on electric as well, so not sure if that makes a difference. Will play around with it

Looks yummy! So thankful for potatoes, they're delicious and so versatile. If you grow the onions from scraps, let at least one of them grow into a flower, allow it to dry, and harvest the seeds or just let them drop. They're very easy to grow with little effort.

In German cuisine my family called something like this "Bauernfreistuk" or "Farmers Breakfast".....my mom would use whatever was in the fridge including adding any plain, cooked pasta she had leftover and it was a great breakfast or lunch. And she wouldn't shred the taters but chunk up cooked potatoes into 1/2" cubes or so which saves time and uses leftover, cooked potatoes as well.

You know I do this with 2 sliced corn tortillas, onions, pepper with 1 lg egg. Hot sauce on the side. Yummy and fast.

Love the concept, but I am a huge crispy hash brown fan. So I would definitely crisp my potatoes up before pouring the eggs on top.

Apparently if you boil your potatoes then refrigerate overnight or longer then they become starch resistant and are good to eat on low carb
