I also don't know think it would hold together with just the eggs & potatoes; don't you need other binding agents? I note too, that when cooking, the top seems to get brown without flipping it, now that's a trick I would like to know. So, yeah really not sure about this.
Oh dear, please cut the green onions completely. Yes, the green parts are soft and difficult to cut, that’s why you use a very sharp knife and good cutting motion.

Use a large fish slice to turn it over half way through (not shown) or it will break apart. Also you don't need as much oil as shown.

I count 4 ingredients not counting the oil, salt and pepper.
The green onion makes it 4 ingredients. Lose them and you're back to 3.
No need to wash the potatoes after cutting or shredding them. Only need to wash it well after peeling the skin off.
They rinsed to help remove some of the starch
Why not just buy shredded hash browns instead of going through all that hassle??
