I don't use ANY Oil to Fry Chicken anymore! Cooked on Stovetop! (No oil, no flour, no breadcrumbs)

    This is a technique that we used in restaurants for various different proteins and for mushrooms. No oil, low heat/cold pan to start and render the fat completely without flipping. Turn for the last couple minutes and then build a pan sauce from the drippings. For the mushrooms, not using any oil in the pan allows you to cook the water out of them and brown them completely. Then you could season them and they’d have a much better texture and color. Glad to see home cooks figuring this out and using it successfully. Your chicken looked amazing!

      @@tash_scI wouldn’t, there’s not a ton of fat to render out and skinless will dry out faster. But maybe it’d work fine

      Yes I have been doing chicken that way for awhile now but I still enjoy some flour and seasonings. It's very economic because not having oil and flour usually means not having fried chicken for dinner. Thank you for sharing this recipe with us. If you get home from work but forgot the cooking oil, don't fret.

    My Mother was from Alabama and this is exactly how she made her chicken! She called it "Broasted chicken."

    Wow, thank you so much Pam. Looking forward to doing this, this week. I’m a retired Veteran of 27yrs of Military Service. Now I’m the house husband. Wife is working full time now. I love cooking but trying my best to cook healthy and avoid MSG, guar gum, high fructose corn syrup, soy by products, cellulose additives, sodium nitrates… and so on.
    Baking my own breads and making my own condiments.
    Going to make my own cheese and butter soon.
    GOD willing.

    Please Note: If you are cooking in batches. Let your skillet cool completely drain the fat from the chicken and wipe clean. This usually takes 2-3 minutes. Sorry forgot to mention it in the video! ❤

      I tried it, but unfortunately, my non-stick skillet was not non-stick. Nevertheless, the chicken was delicious. I will try in my seasoned cast iron skillet, and if the chicken sticks again I will seek a better non-stick skillet. I like that the chicken was not greasy at all! Oh my goodness!     Thank you Pam for bringing back a memory. When my husband and I were having our babies as a young couple, I found myself being without flour or anything to cover up my chicken with so I will cook it just like you did tonight. My children love this Chicken and so did my husband. It shows that you don’t necessarily need a lot of ingredients or a lot of skill to make a really tasty and healthy meal. Thank you again.

    Love it! This also works great in an air fryer oven! I just take a cold nonstick pan, and use patted dry thin-sliced chicken tenderloins. For this method, you want to put the chicken in WHILE it preheats and cook at 400°F for 22 minutes.

    Amazing! We have an electric stove that runs a touch hot, so I turned it down from what was listed and it turned out perfect! Crunchy, juicy fried chicken!! Hubby loved it. Now added to the rotation. Served it with some collards, baked Mac n cheese, and 2 ingredient, no fat drop biscuits. I used my pressure cooker for the greens. Made a quick fatless bechamel with reduced fat cheese over pasta and baked along with the drop biscuits. Had a lovely reduced fat fried chicken dinner in 40 minutes ( not counting the all day, uncovered fridge time for the things to dry out the skin.). So home from work to table in 40 for this kind of meals is awesome! Thank you again!!

    This is one of those videos that I both love, and break my heart. I remember finding this lovely lady a couple of years ago. Of course I shared an exceptionally good video on Facebook and my closest Cousin posted how she was one of her favorite RUclipsrs. From then on, we would routinely message each other videos, talk about tips here we tried both online & on the phone. Then, we unexpectedly lost her a few months ago. I'm sure others know that hole that never fills. But when Pam comes out with a killer video like this, I'm halfway to a message to say "have you tried this yet?" before reality hits. Anyway, needed to vent. But I will try this, for both of us. We both were good in the kitchen, and this is the rare channel where there are tips you never knew, and like this, methods you never tried. A true gem!!

    Pam, I made this fried chicken and I love it! I have never liked my own fried chicken, but this is the easiest and best I have made EVER! I user just salt, pepper & red pepper flakes for a little zing, but it came out perfect!

    I made it today. It came out great. It's very simple. I only eat thighs and will cook them this way forever (except for a stew). I am 63 years old and a fairly good cook. I learned something new. Thank you.

    I am back! I only have one thing to say about my dinner: OH MY GOODNESS: The chicken was absolutely delicious! My husband also loved it and he said put it in the rotation please. So we plan to have it fairly often at least ever other week.
    I do believe it is faster than a sheet pan dinner.

    I tried this recipe for dinner tonight and there was just one problem: stove temperature. We have one of those glass top stoves and medium (5 out of 9 on the dial) on that thing is like high on other stoves. I tried medium-high heat as Pam said in this video, and after the first 10 minutes under the lid the chicken was almost burned. I had to turn it down to half to cook the back half, and after that was nicely browned it was still raw in the middle, so I had to turn it down to 2 for about another 10 minutes to finish it off. If I try this again I'll have to start it at 3 or 4 on the dial to follow the cook times. It was tasty, though. I just used pepper and chipotle powder.

      I agree! Medium high is too high, it burned the top of my chicken, there was too much smoke and grease splatter, I don't think I want to ever do this again!!! Thank God the smoke detector didn't go off!!!

    Hi Ms. Pam, I have been using this method of frying chicken for years, only I put mine in the oven to cook all of my thighs at the same time. I layer a large dark sheet pan with heavy duty foil & parchment paper and then lay my thighs out in rows skin side down to fry them on 350 degrees for 45 mins, then flip them and cook them for 10-15 mins more. I keep my oven light on to see what they look like, so I never have to open the door & disturb the temperature. You can smell them cooking, so if they cook a little quicker, depending on the size of the thighs you buy, you can turn them sooner. This method frees me up to clean up or cook other things on stove top while they are in the oven. Oh, and the reason I use foil and parchment is for easy clean up in the end. Once I remove all the chicken, I just fold everything over in the foil and toss it in a bag and into the trash it goes. No scrubbing pans or mess afterwards.😊 ..Thanks for sharing the stove top method. I am going to try that when I only need to cook a smaller portion. ❤

    So when I said in a response that” I can’t wait to try this!” I meant it. Yesterday, I had to go to Marshalls to get a ceramic pan because I only use cast iron. 😎 Long story , but my short version is that this is SO GOOD!!     I love fried chicken but have a sensitive stomach and usually get sick when I eat out, so I avoid it even though I love it. This recipe is a very, very delicious alternative!
