    Please Note: If you are cooking in batches. Let your skillet cool completely drain the fat from the chicken and wipe clean. This usually takes 2-3 minutes. Sorry forgot to mention it in the video! ❤

      Yes I have been doing chicken that way for awhile now but I still enjoy some flour and seasonings. It's very economic because not having oil and flour usually means not having fried chicken for dinner. Thank you for sharing this recipe with us. If you get home from work but forgot the cooking oil, don't fret.

    My Mother was from Alabama and this is exactly how she made her chicken! She called it "Broasted chicken."

    Pam, I made this fried chicken and I love it! I have never liked my own fried chicken, but this is the easiest and best I have made EVER! I user just salt, pepper & red pepper flakes for a little zing, but it came out perfect!

      😂😂 yep! That’s all you gotta do lol. If you cook in batches let your skillet cool completely and wipe clean in between each batch. This should only take a few minutes. Thanks so much!

    I tried this recipe for dinner tonight and there was just one problem: stove temperature. We have one of those glass top stoves and medium (5 out of 9 on the dial) on that thing is like high on other stoves. I tried medium-high heat as Pam said in this video, and after the first 10 minutes under the lid the chicken was almost burned. I had to turn it down to half to cook the back half, and after that was nicely browned it was still raw in the middle, so I had to turn it down to 2 for about another 10 minutes to finish it off. If I try this again I'll have to start it at 3 or 4 on the dial to follow the cook times. It was tasty, though. I just used pepper and chipotle powder.

      I agree! Medium high is too high, it burned the top of my chicken, there was too much smoke and grease splatter, I don't think I want to ever do this again!!! Thank God the smoke detector didn't go off!!!

      I tried it, but unfortunately, my non-stick skillet was not non-stick. Nevertheless, the chicken was delicious. I will try in my seasoned cast iron skillet, and if the chicken sticks again I will seek a better non-stick skillet. I like that the chicken was not greasy at all! Oh my goodness!     Thank you Pam for bringing back a memory. When my husband and I were having our babies as a young couple, I found myself being without flour or anything to cover up my chicken with so I will cook it just like you did tonight. My children love this Chicken and so did my husband. It shows that you don’t necessarily need a lot of ingredients or a lot of skill to make a really tasty and healthy meal. Thank you again.

    UPDATE: The taste was amazing, more concentrated than oven frying.
    Very important to cut the flesh side to flatten out for even cooking. My husband loved it.

    I tried your recipe for the no oil fried chicken on Saturday and the only complaint I got was WHY DIDNT I MAKE MORE??? Pam it is delicious. Easy seasoning, easy on the budget, great for cook time. Keep these great ideas coming! (PS I'm making it again tonight for dinner!)

    That turned out absolutely glorious, Pam. When I was finishing my undergrad, I took a course called "The Science of Cooking." This recipe reminds me so much on how cooking is a blend of science, art, and love all melted together to create something wonderful.

      It's fried In poultry fat which is one of the worst fats to consume.

      ​@@johnquillan4626That is incorrect. Animal fat is one of the best fats. It's seed oils that are highly processed and inflammatory to the body. Loaded with omega 6.

    Such a lovely woman and so pleasant to listen to. I'll be trying this fried chicken out. I love fried chicken, but haven't made any in several months in an effort to cut down on excess oil in my diet. Now I can have it again thanks to this video

    I made this with drumsticks because that was what I had. And I dry brined them for about 8 hours in my fridge. They were absolutely delicious, and I thank you for this recipe.

    I made it today. It came out great. It's very simple. I only eat thighs and will cook them this way forever (except for a stew). I am 63 years old and a fairly good cook. I learned something new. Thank you.

    You know, this makes allotta sense. Thighs are part of the fatty areas on a chicken, so you really are frying with the fat from the chicken naturally. Can't wait to use this method. Thank you Pam!! Hugs to you for sharing your wisdom❤❤❤

    Are you kidding me! No more soaking in buttermilk, then batter then fry! And I’m sure healthier. There’s just one thing Pam. Make some gravy with those drippings and mashed potatoes.     Thank you for this video & your way of frying chicken. I'm pretty sure this is the way that my late aunt used to fry her chicken. And everybody says how good she used to make fried chicken was. That it wasn't like anybody else's fried chicken. I believe this is the way.

    Pam, you are definitely on to something here! The video looked so good I had to try it. So simple and delicious!!! I just used garlic salt, pepper and poultry seasoning. I didn’t cook mine quite as long uncovered and after turning. Also turned down the heat a little but I have an older electric stove- just used my judgment. Absolutely fantastic! I fixed my second batch right in that fat that had cooked out the first batch (I let it cool a cpl mins) and it turned out just as good. I would fix this for anyone and they would probably never believe it wasn’t marinated, breaded, etc

    Thank you SO MUCH for this! I am a low carb cooker so I stopped using regular flour 7 years ago and NOTHING I have tried get’s me that “crunch” when frying larger pieces of chicken and I love my thighs! ❤ Can’t wait to try this

    I am back! I only have one thing to say about my dinner: OH MY GOODNESS: The chicken was absolutely delicious! My husband also loved it and he said put it in the rotation please. So we plan to have it fairly often at least ever other week.
    I do believe it is faster than a sheet pan dinner.
