This is a technique that we used in restaurants for various different proteins and for mushrooms. No oil, low heat/cold pan to start and render the fat completely without flipping. Turn for the last couple minutes and then build a pan sauce from the drippings. For the mushrooms, not using any oil in the pan allows you to cook the water out of them and brown them completely. Then you could season them and they’d have a much better texture and color. Glad to see home cooks figuring this out and using it successfully. Your chicken looked amazing!

Love it! This also works great in an air fryer oven! I just take a cold nonstick pan, and use patted dry thin-sliced chicken tenderloins. For this method, you want to put the chicken in WHILE it preheats and cook at 400°F for 22 minutes.
I was speechless while watching this.....BRAVO to you Miss Pam!! Love my chicken thighs and will most definitely be trying this method. I also say "God's willing" because that is what my grandmother used to say because it is HIS will.
Amazing! We have an electric stove that runs a touch hot, so I turned it down from what was listed and it turned out perfect! Crunchy, juicy fried chicken!! Hubby loved it. Now added to the rotation. Served it with some collards, baked Mac n cheese, and 2 ingredient, no fat drop biscuits. I used my pressure cooker for the greens. Made a quick fatless bechamel with reduced fat cheese over pasta and baked along with the drop biscuits. Had a lovely reduced fat fried chicken dinner in 40 minutes ( not counting the all day, uncovered fridge time for the things to dry out the skin.). So home from work to table in 40 for this kind of meals is awesome! Thank you again!!
I made this with drumsticks because that was what I had. And I dry brined them for about 8 hours in my fridge. They were absolutely delicious, and I thank you for this recipe.

This is one of those videos that I both love, and break my heart. I remember finding this lovely lady a couple of years ago. Of course I shared an exceptionally good video on Facebook and my closest Cousin posted how she was one of her favorite RUclipsrs. From then on, we would routinely message each other videos, talk about tips here we tried both online & on the phone. Then, we unexpectedly lost her a few months ago. I'm sure others know that hole that never fills. But when Pam comes out with a killer video like this, I'm halfway to a message to say "have you tried this yet?" before reality hits. Anyway, needed to vent. But I will try this, for both of us. We both were good in the kitchen, and this is the rare channel where there are tips you never knew, and like this, methods you never tried. A true gem!!
You know, this makes allotta sense. Thighs are part of the fatty areas on a chicken, so you really are frying with the fat from the chicken naturally. Can't wait to use this method. Thank you Pam!! Hugs to you for sharing your wisdom❤❤❤
Pam, I made this fried chicken and I love it! I have never liked my own fried chicken, but this is the easiest and best I have made EVER! I user just salt, pepper & red pepper flakes for a little zing, but it came out perfect!
I made it today. It came out great. It's very simple. I only eat thighs and will cook them this way forever (except for a stew). I am 63 years old and a fairly good cook. I learned something new. Thank you.
Are you kidding me! No more soaking in buttermilk, then batter then fry! And I’m sure healthier. There’s just one thing Pam. Make some gravy with those drippings and mashed potatoes. Then let me know what time dinner is and I’ll be right over! Lol! So delicious. Thanks for all your great recipes Pam 🐓🐓🐓💕

I am back! I only have one thing to say about my dinner: OH MY GOODNESS: The chicken was absolutely delicious! My husband also loved it and he said put it in the rotation please. So we plan to have it fairly often at least ever other week. I do believe it is faster than a sheet pan dinner.

I love your sign off Ms Pam because my Dad use to ALWAYS say that when he would visit and was leaving to go back home. Love following you and your cooking recipes and techniques YOU ROCK!!!!
I tried this recipe for dinner tonight and there was just one problem: stove temperature. We have one of those glass top stoves and medium (5 out of 9 on the dial) on that thing is like high on other stoves. I tried medium-high heat as Pam said in this video, and after the first 10 minutes under the lid the chicken was almost burned. I had to turn it down to half to cook the back half, and after that was nicely browned it was still raw in the middle, so I had to turn it down to 2 for about another 10 minutes to finish it off. If I try this again I'll have to start it at 3 or 4 on the dial to follow the cook times. It was tasty, though. I just used pepper and chipotle powder.
I agree! Medium high is too high, it burned the top of my chicken, there was too much smoke and grease splatter, I don't think I want to ever do this again!!! Thank God the smoke detector didn't go off!!!
My oh my oh my... That looked amazing and so easy to prepare. Just needs some creamy whipped potatoes and stringbeans. This is going to happen this week! Thank you, Ms Pam!!! 😋 😊
This is going to be another one of those videos where I think "that's ridiculous, it'll never work!" and: of course it does because it's Pam, isn't it? 😂
I can’t believe this I’m 69? Years old and NEVER knew about this. I haven’t had fried chicken in a long time….but things are gonna change. THANK YOU SWEET PAM ❤️🤗
Hi Ms. Pam, I have been using this method of frying chicken for years, only I put mine in the oven to cook all of my thighs at the same time. I layer a large dark sheet pan with heavy duty foil & parchment paper and then lay my thighs out in rows skin side down to fry them on 350 degrees for 45 mins, then flip them and cook them for 10-15 mins more. I keep my oven light on to see what they look like, so I never have to open the door & disturb the temperature. You can smell them cooking, so if they cook a little quicker, depending on the size of the thighs you buy, you can turn them sooner. This method frees me up to clean up or cook other things on stove top while they are in the oven. Oh, and the reason I use foil and parchment is for easy clean up in the end. Once I remove all the chicken, I just fold everything over in the foil and toss it in a bag and into the trash it goes. No scrubbing pans or mess afterwards.😊 ..Thanks for sharing the stove top method. I am going to try that when I only need to cook a smaller portion. ❤
Thank you for sharing! I LOVE oven fried chicken and it's easier for me with 5 going on 6 kids to let the oven do the work. I'm glad you can still do this recipe in the oven 😊
So when I said in a response that” I can’t wait to try this!” I meant it. Yesterday, I had to go to Marshalls to get a ceramic pan because I only use cast iron. 😎 Long story , but my short version is that this is SO GOOD!! This is my new way of cooking bone in chicken thighs! The clean up is so easy too!! Thank you so much , Pam!❤️❤️❤️
Hi Sharon - can you tell me, was there very much splatter when you cooked the chicken with the lid off - I share a kitchen so I have to be very careful - thank you
@@m.corege9726 a little bit. When you take the lid off to turn the chicken. It splatters a little but easy to clean. I don’t know if this helps you. I hope you make it because it is so good.

@@connieb5839 my son says yes. Occasionally he adds a little garlic powder to it also. But is happy with it the way Pam makes hers.
You’re actually a genius, I never thought of using the chickens natural oil. This made my eyes water, no joke 😭 I love when people have a real passion for something and teach others✊🏽 Thank you Ms. Pam🙏🏽
Thank you Pam for bringing back a memory. When my husband and I were having our babies as a young couple, I found myself being without flour or anything to cover up my chicken with so I will cook it just like you did tonight. My children love this Chicken and so did my husband. It shows that you don’t necessarily need a lot of ingredients or a lot of skill to make a really tasty and healthy meal. Thank you again.
Thats awesome :)
Thank you Miss Pam! This will be supper tonight for sure!
Pam is a national treasure. I just subscribed because of this video.
Me too. I needed her energy to get me cooking again.
You know what? Your channel came into my life at random, but I'm already feeling better for it. Thank you for your cooking wisdom, Pam! ☺️
Oh, she made me cry. My late father used to say “if the Lord’s willing and the creek don’t rise “. My children loved to hear him say that. She seems like such a wonderful person.
I am cooking this right now😊
UPDATE: The taste was amazing, more concentrated than oven frying.
Very important to cut the flesh side to flatten out for even cooking. My husband loved it.
Could not agree more.
Finally someone taught me a healthy fried chicken. Kudos lady! Im trying this indeed.😊
It's because of this lady my father all the sudden thinks I can cook! I love this lady😂❤
Pam you are in a cooking category all by yourself! This recipe will change cooking fried chicken forever 😊
I’ve told all my friends they are missing out not watching your channel. Blessings & keep bringing new creative, delicious recipes and cooking techniques.
Linda, I heartily agree!

Pam, thanks for showing how to cook chicken without oil. I am going to try this real soon. Thank you for your awesome recipes.
@@aliceminor3533 You will be glad you did. It is quick, easy, delicious, and not as messy. Just make sure your skillet is truly non-stick.
You've inspired me to upgrade my dishes. I prefer to bake but now I can fry with no oil. Thank-you. I will make this!!!
Hello Deborah
How are you doing today?
I'm on batch 2 now, as you speak, Ms. Pam! I can't wait to taste it and my husband is impressed! Now he keeps walking through the kitchen saying, "Oh my goodness" 😄
Wonderful! Let me know how you like it!
😂
What a sweet woman. Never thought of cutting the chicken… but I’m going to tonight, looks healthy and delicious
It was meant to be!! Last night I took out a pack of chicken thighs to thaw overnight. I was going to make butter chicken & potatoes over basmati, but the universe is trying to tell me something and I think I'm going to listen! It's going to be an early dinner tonight! Thank you so much Pam! ❤😊
Well i already marinated my chicken so now i can't do this😢 that's the universe for ya, get some, miss the others.
That turned out absolutely glorious, Pam. When I was finishing my undergrad, I took a course called "The Science of Cooking." This recipe reminds me so much on how cooking is a blend of science, art, and love all melted together to create something wonderful.
It's great to see you doing well, Pam! Thank you for the great content 🙏 🤩😋
Aaawww yes that is a very good way to put because it is all of those wrapped in a package. And thank you so much Claudia for you awesome support! 🙏🏽❤️❤️
Thank you So much I’m going to try this ❤❤❤
Your soul, energy and your whole aura reminds me of back in the days in the 80s of a lady named grandma K, that used to make food for all of us children sometimes when we used to hang out or parents work late nights. I love your energy and I look forward to continuing to support your channel. You’re timeless and wish we had more females. Queens and mothers like you around the way like old times.
Aaaawwww thank you so much for your kind words
Well you can be that same mentor as well. 👍🤗🌻
Never thought i would see a person of color just using salt and pepper and no oil. It looks amazing and i love your videos. You are awesome.
My family taught me to cook brilliantly. The elders are gone. But not, they're teaching me more through you, your brilliance. Blessings. Sending Light and Love...
Pam is literally saving lives with her recipe, for all those who eat fried chicken up to to 3 times a week. It's so bad for us, actually increases Cancer risk by alot. Thanks for this video Pam, you go girl🌻

It's fried In poultry fat which is one of the worst fats to consume.
Crispy and fast!
@@johnquillan4626That is incorrect. Animal fat is one of the best fats. It's seed oils that are highly processed and inflammatory to the body. Loaded with omega 6.
I am 66 and have NEVER fried chicken without any oil. Girl!! R u kidding me? No way! “Lord have mercy” I will be frying my chicken 🍗 this way, next time for sure. Thank u sista sista. Love and appreciation! ! Yes ma’am!
It so good ❤
Love it! MY MOUTH is watering for it!
I have been doing it for many years. It can also be done in the oven and by a air fryer.
That was a 5 star cooking lesson! Thank you!
Thank you Pam. Great video! I can’t wait to try this. As Diabetic I try to minimize carbohydrates and avoid Fried crispy chicken that I truly love. This will make my day. Thanks again.
You don't have to clean chicken.
@@Alan-71351no you don't have to but if I feel the chicken all slimy bc it sat in too much of its juices I'll rinse it.
This is how my grandma would make - and yes, delicious and crunchy! 😋....I realized what my problem has been - I've not dried chicken enough. Thank you for sharing this.... 🥰
Love it! This also works great in an air fryer oven! I just take a cold nonstick pan, and use patted dry thin-sliced chicken tenderloins. For this method, you want to put the chicken in WHILE it preheats and cook at 400°F for 22 minutes.
Excellent presentation; help for novices as well as those who've been cooking for years.
I was speechless while watching this.....BRAVO to you Miss Pam!! Love my chicken thighs and will most definitely be trying this method. I also say "God's willing" because that is what my grandmother used to say because it is HIS will.
I just learned something today! Thank you so much for sharing your good cooking wisdom. Sunday fried chicken is gonna make a come back! 🎉
What is ‘dry brining’?
Looks like that will satisfy my thirst for fried chicken with no guilt, no omega 6 oils, no carbs (flour etc.) and no mess, can't wait to try 🤗
Hi Pam, you have taught me a whole new way of cooking, & I'm 79, and we can still teach old dogs new tricks, and I simply LOVE it, I'm like a sponge 🧽, I love to learn, & UR A PERFECT MENTOR ❤❤❤❤

I just finished dinner and I used your method for frying the chicken and it was delicious! Turned out exactly the way you said it would. Crispy on the outside and juicy and tender on the inside. Thank you! This is my new way of frying chicken ,)
I just have to add that the fat off the chicken was so good I had to sop it up with a piece of bread ha! So good!!!

Absolutely and thank you!!!
Pam, I made this fried chicken and I love it! I have never liked my own fried chicken, but this is the easiest and best I have made EVER! I user just salt, pepper & red pepper flakes for a little zing, but it came out perfect!
Wonderful!
I made it today. It came out great. It's very simple. I only eat thighs and will cook them this way forever (except for a stew). I am 63 years old and a fairly good cook. I learned something new. Thank you.

Thank you Pam for this wondrous informative video!!! An ‘aha that makes sense because the chicken has it’s own oil’ moment popped into my head as soon as it started sizzling! I am back! I only have one thing to say about my dinner: OH MY GOODNESS: The chicken was absolutely delicious! My husband also loved it and he said put it in the rotation please. So we plan to have it fairly often at least ever other week.
I do believe it is faster than a sheet pan dinner.
Before my AirFryer days I did fry my chicken without any batter or bread crumbs but never no oil.
We thank you Momma Pam for sharing this with us. Yes ma’am I will be trying this technique!❤
I love your sign off Ms Pam because my Dad use to ALWAYS say that when he would visit and was leaving to go back home. Love following you and your cooking recipes and techniques
YOU ROCK!!!!
Use your own judgement
Thank you for this info. I have a glass top also.
THAT was exactly my experience! I also have a glass cooktop stove.
Hate electric stoves
... love my easy to regulate gas.
My oh my oh my... That looked amazing and so easy to prepare. Just needs some creamy whipped potatoes and stringbeans. This is going to happen this week!
Thank you, Ms Pam!!! 😋 😊

GREAT DETAIL! You took the time to present exactly what was needed to produce your chicken. Excellent!
I can’t believe this I’m 69? Years old and NEVER knew about this. I haven’t had fried chicken in a long time….but things are gonna change. THANK YOU SWEET PAM ❤️🤗
You’re welcome
Can u do wings and breast too this way? Did anyone do that yet on here? Please let me know Pam or whomever!
