I find a quick rinse under a running tap followed by an immediate dry with a paper towel doesn't increase the water content of mushrooms one bit. A soft mushroom brush also works well.

I'm going to have to try that, but I think I'll add a couple of table spoons of kerrygold butter to the mix and instead of the oven maybe put them on a rack and cook them in my pellet smoker with some alder pellets.

You should try making some of my favorite jalapeño poppers just use jalapeño cream cheese get some jalapeños, vitamin half take the seeds out, put the cream cheese in the jalapeños, wrap it with bacon put a toothpick through it and took them till they are done so yummy. They are good for football game and parties

How far in advance can this be made?
Any suggestion to replace the bacon? I have a vegetarian friend who eats some seafood.
They make vegan bacon but feel free to experiment with other options. It can be versatile
