I worked for years at Jews for Jesus International Christian ministry headquarters in San Francisco. Our co-founder's (Susan Perlman) mom used to show up at the office every year for the (Jewish) holidays & make potato latkes downstairs in the kitchen all day for the staff. You could smell them throughout the entire downstairs! There was nothing like Mother Perlman's latkes . I will definitely try this recipe, they look incredible & bring back wonderful memories. Potato starch or juice mixed with water is great to water your plants! Makes them lush! Also I hope you composted your peelings! You could also boil both the juice and the peelings to become soup broth, which can be frozen.

We love those for dinner, along with a nice green salad and some salted and peppered sour cream. And a few slices of smoked salmon. I always add grated carrots and zucchini to the latkes, a little more veggies are always welcome. Heavenly ❤❤❤

My art teacher was Jewish and she brought some apples with honey and a few of these latkes and I absolutely loved them. So delicious. With sour cream and chives... They are perfect. OMG! Natasha! These are soooo good. I have made Potato pancakes many times in the past, but they always came out really heavy and dense. These are so light and have more flavor!! I added celery seeds as well. Terrific!! Thanks- James
After reading about them in a Leon Uris novel years before I found myself in 1992 at the Crystal Palace (Chicago suburbs) eating potato latkes and being served by a girl that would’ve made Miss America jealous. They are even better than the Warsaw book extolled. This is the best recipe I found in 30+ years. Thanks for the post!
We did it! I was looking for this драники recipe. Only I used coconut oil for frying. It turned out pretty good. All my kids and my husband love it with cal slaw salad, shredded carrots garlic mayonnaise, radish, cucumber 🥒on the side.

Just came to say thank you so much! I made these tonight, and I took your advice and turned the heat up a bit more in my skillet. They came out so much better! Not mushy at all! I probably could have squeezed put more moisture. But I have arthritis so I just did my best. They were so delicious ❤
When you have squeezed out as much as you can, wrap them in double or triple paper towels and squeeze some more. Flour sack towels also work well and are reusable.

Mrs. Natasha, thought you went off the grid on us , lol , I am a big fan of these latkes and I am Irish so you had me at potatoes, after squeezing I put mine in the salad spinner lined with a paper towel underneath the perforated basket. My wife is German/Austrian and she makes these , but usually makes the German potato pancakes which are very similar. God Bless

Hello Natasha! We had the latkes few days ago. They were really tasty. The only thing to change from this recipe is the use of a food processor for the onion because some of it came out in chunks. Sour cream is definitely the best way to eat them. Thank you so much!
I love latkes , i grate a carrot into mine and add garlic,i also top mine with sour cream or cheddar , your son is quite the adventurous foodie, teach them while they're young, i did with my daughter and my grandson when he gets older

My mother's mother always grated the potato first and then transferred it into a colander over a bowl to squeeze out the juice before adding the dried potato to the grated onion and egg. After about 20 minutes, she would tip the bowl of grated potato juice slowly into the sink, revealing a layer of sludgy potato starch at the bottom. She would add spoons of this sludge to the potato, onion, and egg mixture for binding. It made her latke/kartoplyanky super crispy. I wonder if this would still work. Thanks for posting!

These look really good. I won't be cooking this weekend since Mrs. Jonstigator went home for a month to visit with family and friends. Polish here! In my family we use one ingredient more, it's our little secret - carrots. Just a small one makes a huge difference, it's making latkas more flavorful and tender. Also, we add a bit of potato starch. But I guess we like them more fluffy than crispy.
Had a wonderful neighbor who was like a grandmother to my children. She made the best Latkes. Sadly she is not longer with us and I was unable to get her recipe. Tried your recipes and it was just like the ones made by out neighbor. Thank you.

Keep the starch from the potato water for the Latkes. Helps bind them together.

You can rice flour it will give more crispy and it will remain crispy even in tiffin add lest amount of flour and my daughter loves it

My father used to make these for our family of eight. No food processor back then, just the box grater. They were fabulous! We grew up eating them with sour cream and apple sauce. Spotted Sharky at around 6:27 on your son’s hand. 💜😎🇺🇸
