- Stuffed mushrooms are always a party favorite, especially during the holidays! Soft mushroom caps are stuffed with a cheesy, herby, and garlicky filling. Then baked until golden with crumbled pecans on top. The perfect vegetarian appetizer I'd say!
Unlike most stuffed mushroom recipes, this one is gluten-free, as I've swapped panko breadcrumbs for chopped pecans. And I think it really elevates the flavor! It's truly an appetizer both vegetarian and non-vegetarians will love. And perfect for both Thanksgiving and Christmas. Because everyone craves cozy, indulgent foods during the holidays right? What I also like to do with these is pop them in the oven for about 10 minutes before stuffing them to get rid of all the water. Take them out, sprinkle some salt and pepper inside for extra flavour, stuff them with the mixture and get them back in the oven. They turn out perfect this way!

The first time I had these a friend had made them, she used walnuts instead of pecans, and spinach instead of parsley, plus a bit of chives and a thai chili! Both versions are soooo good!

I've been making these all week long. First batch was a little salty for me so next batch I used salt free butter and did not add salt. Delicious! Next batch I added a little Hellmans mayo and some sautéed lump crabmeat ..Delicious again! I also took S. Silva"s suggestion to put the mushrooms in at 400 for 5 minutes to dry out the mushroom..Thanks Lisa!!!! I''ve recently limited my lectin intake and feel so much better in my gut....no more diarrhea! Thanks for sharing your story concerning gluten (lectins)..
I like this one. I'm a recycled bachelor who sautees the mushroom caps before stuffing. I use Boursin, Alouette, or a similar cheese as the stuffing. After stuffing, I bake as you did.

These mushrooms are SO delicious. I wanted to take a picture of those beauties but they disappeared so fast I didn’t get a chance. The stuffing has so much flavor it’s almost hard to describe what’s in there if I hadn’t made them myself. Exquisite combination of flavors and I wouldn’t change a thing about this recipe! I just need to make MORE next time!

If you make them for dinner, you can also use the larger mushrooms, so it's less fussy than making finger food. They are a great way to serve up leftover meats, grains, and veg - 'Thanksgiving leftovers edition' would be fabulous over the weekend.

I love the way you are explicit and nor confusing in your instructions. I also like that the ingredients aren't expensive and are simple. I was looking for a stuffed mushroom recipe for Greek Easter. Most of my family are Vegetarian (What??? Greek? no Lamb? Nope! not in my house but I allow chx and fish) Also, my daughter is Gluten free (Celiac disease) so this recipe looks perfect. Great! They're a hit at my table. Really appreciate a vegetarian no-bread-crumb recipe. I had walnuts on hand ... A bit stronger nutty flavor but balanced well with the cream cheese and seasoning.
