I do a very similar recipe for my family when they are sick as well. If you include ginger and onion to the recipe you are hitting all the basic immunity busters. Pulse Turmeric helps with sore joints and ginger settles the stomach . 😊
Yes, I was thinking this is very much like the rice ramen soup I make except I add onion and ginger too. Also add baked chicken with the noodles. Planning to make some this week.

Love your recipe, I made my own veggie broth and added red onion and mushrooms. Didn't have any ginger and still liked the way it came out. Good instructions

I'm gonna try it today just bought some large bok choy on special for perfect recipe for it.
I also make egg drop soup with the same spices . I pressure cooked some last week. Pneumonia is hitting our area pretty hard so I want to be ready.
Next time put the Bok Choy in a steamer with a little water in the bottom pot. Place bok choy in the top pot add some minced garlic and some chicken stock powder and some fragrant sesame oil, Black pepper(Tumeric if ypu like). Steam your bok choy. Now your bok choy is ready without the burning drama and you have a bok choy stock in the lower pot. Now start your soup from there.
I like ateaming as it maintains the flavor and nutrients better. I would also steam a chopped onion or spring onions with the bok choy personally.
Not the flavor profile i was looking for but was good. Very easy to make.

Wow. Thank you i just was given a box full and trying to think all what to do with it. I did get lots on the dehydrator to save being it's only a summer item. I dehydrate everything i can . But a soup yes please. I wonder can you freeze the soup and still taste as great? I like a fast grab now and then.

Love this vegan version of a bok choy soup 😋😋. I've been trying to add more meat free recipes but this would be good with some thiny slices pork or chicken

"Simple" soup :) but first you need to work 5+ hours cooking the much harder to make chicken stock
Make veggie broth, so much faster.
