1 tbsp olive oil
3 shallots diced
1 bunch green onions chopped and green and white parts divided
4 cloves garlic minced
2 tbsp ginger fresh, minced
5-6 cups chicken broth or water for vegetarian
2-3 whole star anise
2 tbsp soy sauce
10 ounces crimini mushrooms sliced
6 ounces rice noodles
1-2 heads bok choy roughly chopped
Sesame seeds for topping
Red pepper flakes for topping

I literally just made this soup and while letting it cool a minute searched for bok choi soup recipes and saw this! I had shallots, ginger garlic, 2 small carrots, baby bok choi soft tofu shiitake and 2 packs of soy and shrimp ramen, 3 eggs, a spoon of miso and 6 dried shrimpnto boost the broth. I added 3 thai chilies and sesame oil rather than sesame seeds. Also had a little pho broth so thats where my star anise came from. Its so warming and healthy on a rainy day. Shiitake are good for immune and lung health.

I never saw this recipe before but I almost made the exact same recipe except I used rice noodles and some rice vinegar and I dont have any mushrooms lying around or I'd add those.
This not recipe, this is poor american improvisation.

How important is the star anis? It's really hard to get over here.
You could skip that and maybe opt for something like chinese 5 spice if you can get that. I was actually surprised she added 3 as even one gives a strong aniseedy taste.

I did like your video, and your website which "seems" very complete; I had to struggle to find the amounts for each ingredient, same did not find then😠
I add cooked chicken breast and Asian rice noodles instead of ramen.

I made this and it was delicious. I ended up adding a tiny bit of sesame oil and I dry-roasted the sesame seeds. I really enjoyed this. :-) But I found the music annoying. :-/ May I suggest silence or just cooking nouses for your next videos? :-) Not everyone has the same taste in music, plus I had my own music on already. Dvorjak's New World Symphony is simply transcendental, don't ya know.....
