Jb bhi aam mandi se katwaiye, ghar aane ke baad aam ko achhe se dho kar dhoop me failaiye do teen ghante kisi cotton ke kapde pe. Jb upar ka pani achhe se sookh jaye tb ye video me dikhaye gaye process ko follow kijiye. Es sukhe achar me lehsun aur do char chammach sirka(vinegar)bhi add kar sakte hain, taste aur achha hoga.

Jai Hind Madam ji,आप बता रहे हैं कि अचार को सुखा लिया उस की नमी ख़तम कर ली,बिल्कुल सही, पर बाद में मसाले में नमक हल्दी का जो पानी बचा था वो आप ने मसाले में मिला दिया,क्या वो नमी नहीं बनाए गा,जब वो पानी अचार में मिक्स करना है तो आप आम को उस पानी से अलग कर के क्यों धूप में सुखाते हो,
आम को धूप दिखाना बहुत जरूरी है क्योंकि हम बिना तेल या सिरके का अचार बना रहे हैं, और किसी भी चीज़ को अगर आप धूप में अच्छे से सुखा लेंगे तो लंबे समय तक अचार या कोई भी चीज़ सुरक्षित रहती है। और जो पानी हमने अचार में इस्तेमाल किया है वो आम का ही पानी और नमक है और नमक ही एक ऐसा preservative है जो हमारे अचार को खराब नही होने देता लम्बे समय तक, अब चूंकि हमने अचार में न ही कोई तेल इस्तेमाल किया है न ही सिरका तो बस अचार के मसालो को मिक्स करने के लिए उस पानी का इस्तेमाल किया है, और ये पानी अपने आप सूखेगा भी जब आप रोज़ाना मर्तबान को धूप में रखेंगे। आप इस अचार में पानी नही मिलान चाहते तो मत मिलाइये, उसके स्थान पर तेल अधिक कर लीजिए। अचार के और अच्छे स्वाद के लिए उसमे थोड़ा लहसुन कूट कर मिलाइये। धन्यवाद।

One more request for u mam.i usually follow all ur pickle recipes. I love that.pls mention always weight of vegetables after chopping also.it will help to make pickle perfectly

Yes it is necessary to cover the top of the bottle with any clean, dry cotton cloth or any kitchen towel paper because when you keep the pickle in sunlight, the evaporation process will start and its vapor will damage the pickle.

Thoda safed sirka ya tel dalkar aur ek chammach namak aur ajwaine dalkar dhoop me rakhiye kuchh din, achar apne aap gal jayega. ho sakta hai apne achar ke liye jo aam liya ho wo achar wala nahi tha tabhi nahi gala warna achhe se gal jata hai.
