I am blessed to have an oak grove 10 min bike ride from me. Unlimited Chicken of the Woods. I harvest about 25kg and have enough for a whole year for the family! It's our favourite mushroom, even though we eat lots. So versatile!

I remember trying schnitzel in Germany years ago. But, Wow! This is interesting. I never heard of this type of mushroom. Chicken of the wood schnitzel looks amazing , nice and crunchy. What a beautiful garden Gaz! Thanks for sharing this amazing recipe.

Mushrooms are just great overall. I also use oyster mushrooms to make calamari and shitake to make bacon. I will definitely try this recipe out when I do come across chicken of the woods.

I prefer to use 2 pairs of chopsticks for breading my food. No sticky stuff on my hands and it works really well

As a austrian myself I suggest you try the Schnitzel next time with lingonberry jam or if you don't have that cranberry jam. I didn't like it as a kid but now I can't imagine anything fitting better than that taste wise. Thank you for showing a meatless way of making a childhood dish that I loved :)

In Poland we also have chicken mushrooms, but they don't grow on trees. They are smaller and we call them small chicken - kurka (plural - kurki), or pieprznik. I use them to make sauce for potatoes. I stew kurki with onion and smoked tofu in a pan. Then I add sour cream and lots of fresh dill ♥

FYI you can pick it all and not harm the fungi. What you see is the fruiting body of the fungi. Essentially it’s like picking the apple off the apple tree.
Gotta leave some for wildlife/other foragers 🌳

@@GreenWitch1 Depends on the situation and area… for example, private vs public land….Perhaps some really need that extra food….Sometimes you come back to check on what you’ve left only to find it rotting…. To say it’s “pure greed” is very black & white thinking.

A couple of years ago my wife found and harvested some Chicken of the Woods. I've been vegan for about a decade now but had certainly eaten my share of KFC in the past. She made KFC Secret Recipe Fried Chicken with Chicken of the Woods and it was hands down the best fried chicken I have ever had in my life. Some workers were around our house at the time and she gave some of them the fried Chicken of the Woods to try and most of them couldn't believe it wasn't chicken. Someone needs to grow this stuff in a controlled environment for mass consumption because it really is fantastic. We see it a lot where we live but you have to be careful and make sure it's not infested, rotten, or otherwise degraded. Usually if it's high up and light in color it's okay to collect up and use. Great video and, yes, you did scare the crap out of me for just a second.

Thank you so much for all of your videos! I think I found your channel in 2020 (not exactly sure)? But as a try-all omnivore (I've been vegan, raw vegan, vegetarian, pescatarian, you name it), I've been overjoyed with your journey of vegan exploration. You always find something new to do and explore in your craft/ artistry.
You can also make a lovely, vegan, chicken fettuccini with these mushrooms full of protein and flavor. Coconut cream is a brilliant base for bringing out the hint of sweetness and garlic-umami in the sauce when you add a kiss of lemon juice (and a teeny bit of sumac and nutmeg) to the garlic sauce. It's delectable! Cheers to you and all you do!
Oyster mushroom is another option, now grown widely in Australia.
My youngest daughter and I were talking about if we could eat anywhere in the world where would it be? We talked about famous chefs, Greece, Italy...We want to eat your food at your place! Truly heaven!

I'm from Austria and I never had Schnitzel with Sauerkraut. We usually eat it with cooked peeled potatoes coated in a little bit of butter & parsley and a side of gooseberry jam.

Herb sauces go wonderfully with Schnitzel. I come from Frankfurt, Germany, and there is a local dish called Frankfurter Schnitzel. It is a Schnitzel served with Frankfurter Green Sauce, which consists of yogurt and sour cream and large amounts of herbs: chives, parsley, chervil, cress, sorrel, borage, tarragon, dill, and savory. I have often made this dish vegan myself, and I think you would really like Green Sauce! Love your recipes! Greetings from Frankfurt

I love a good crunch. The dish looks so delicious. In the past I did breadcrumb extra firm tofu after sprinkling it with some chicken seasoning. That tasted really good too. Have a wonderful day and many blessings 🌱💛✨

Gaz… wild mushrooms utilize our interaction to spread more efficiently. Never fear harvesting all that you find, especially if it’s just going to rot otherwise. It does not harm the organism, more than likely actually helps!

Your schnitzel looks absolutely delicious. Some schnitzel recipes use a mushroom gravy and yours is just made of mushroom and it looks amazing. You could also do a fried chicken of the woods sandwich that would be delicious.

What he is doing isn't vegan. There is no reason to make any comparisons between mushrooms and the consumption of fowls.
