I am blessed to have an oak grove 10 min bike ride from me. Unlimited Chicken of the Woods. I harvest about 25kg and have enough for a whole year for the family! It's our favourite mushroom, even though we eat lots. So versatile!

I remember trying schnitzel in Germany years ago. But, Wow! This is interesting. I never heard of this type of mushroom. Chicken of the wood schnitzel looks amazing , nice and crunchy. What a beautiful garden Gaz! Thanks for sharing this amazing recipe.
Mushrooms are just great overall. I also use oyster mushrooms to make calamari and shitake to make bacon. I will definitely try this recipe out when I do come across chicken of the woods.

But as a try-all omnivore (I've been vegan, raw vegan, vegetarian, pescatarian, you name it), I've been overjoyed with your journey of vegan exploration. You always find something new to do and explore in your craft/ artistry. You can also make a lovely, vegan, chicken fettuccini with these mushrooms full of protein and flavor. Coconut cream is a brilliant base for bringing out the hint of sweetness and garlic-umami in the sauce when you add a kiss of lemon juice (and a teeny bit of sumac and nutmeg) to the garlic sauce. It's delectable! Cheers to you and all you do!

As a austrian myself I suggest you try the Schnitzel next time with lingonberry jam or if you don't have that cranberry jam. I didn't like it as a kid but now I can't imagine anything fitting better than that taste wise. Thank you for showing a meatless way of making a childhood dish that I loved :)

When I went to adirondack’s mountains in USA, we harvested some, and yes, they are unbelievably chickenny-textured, we had so many i ate for dayss, soo goood. They are a truly blessing of the woods
Herb sauces go wonderfully with Schnitzel. I come from Frankfurt, Germany, and there is a local dish called Frankfurter Schnitzel. It is a Schnitzel served with Frankfurter Green Sauce, which consists of yogurt and sour cream and large amounts of herbs: chives, parsley, chervil, cress, sorrel, borage, tarragon, dill, and savory. I have often made this dish vegan myself, and I think you would really like Green Sauce! Love your recipes! Greetings from Frankfurt
It would be nice if chicken of the woods was more available. You've got quite a special dish there. I don't eat chicken, but would love to try this alternative. Unless it can be home grown it might only be available from the forest gods, in which case you've been very blessed. I have a lot going on in my life at the moment and it isn't the easiest of situations, but your videos help remind me to stop and smell the roses. Thankyou for that.

Your schnitzel looks absolutely delicious. Some schnitzel recipes use a mushroom gravy and yours is just made of mushroom and it looks amazing. You could also do a fried chicken of the woods sandwich that would be delicious.

In Poland we also have chicken mushrooms, but they don't grow on trees. They are smaller and we call them small chicken - kurka (plural - kurki), or pieprznik. I use them to make sauce for potatoes.
