Back in the 1970's, there was a house in Boulder, CO that became a restaurant. It served only 8 people a night and had only 2 choices on a fixed menu. Even the wine was already chosen. Reservations were placed months in advance and we dressed up to go. It was a real treat as it was SO EXPENSIVE! The chef treated us like his guests and not as customers. Very memorable!

Today marks 13 years since my father died by suicide… and what luck that I should see your video, Gaz. My Dad was a chef, from Wales. Yes yes, and I vividly remember in my grandfather's place we had a butternut squash plant and every morning during my summer vacation my grandmother and sometimes I used to pick the flowers to be fried crisp and brown dipped in chickpea flour batter in heady peppery mustard oil. Yes, you should absolutely open a garden restaurant!! Why not just start small, serving from your garden at your house for your community, and the build up from there? Have you heard of "The Lost Kitchen" in Freedom, Maine in the US? She began by serving in her little apartment to family, friends, and the community, she called it "The Supper Club", and then expanded by purchasing an old mill and converting it into a restaurant. Now she has customers from all over the world submitting postcards for reservations from which she randomly pulls postcards to make reservations. She sources all her ingredients from local farmers and fishermen.

Flower courgette is so goooood, it's remind me my childhood in South of France where my grand ma was serving it as a beignet for starter .. but this one stuffed and served as a main with a plant based ricotta, oh YES ! I love courgette flowers! They are very traditional here in Italy. I never fill them, I just make a batter with sparkling water and flour and fry them and if I have some batter leftover, I fry that too using a spoon to make small pancakes...I really love them!

We also have them in the Mediterranean. Filled with local cheese and fried or stuffed with minced meat +rice and cooked. They are delicious!

I love this! Courgette flowers,stuffed and boiled,or fried in batter or without are a staple in Greece and I absolutely swear by them.

I also have a desire to have my own tiny restaurant one day but have been delaying it for different reasons, one of them being not to loose the sense of joy when cooking. What a vibe ! Flower courgette is so goooood, it's remind me my childhood in South of France where my grand ma was serving it as a beignet for starter .. but this one stuffed and served as a main with a plant based ricotta, oh YES ! I'll have to try it now. Thank you for keeping it authentic, raw and simple.

I love courgette flowers! They are very traditional here in Italy. I never fill them, I just make a batter with sparkling water and flour and fry them and if I have some batter leftover, I fry that too using a spoon to make small pancakes...I really love them!
