Hi guys, you might find this funny but when I was very little there were few things I liked less than lima beans. Used to hide them in my napkin to toss them out after dinner! Now, I can’t get enough them of and this recipe was one of the things that made me change my mind after all these years! Is anybody else a bean convert and what ones do you like best? That’s what I did and it turned out good. The flavors in this are really good. I didn’t have butter beans so used cannellini instead. Next time I’ll make sure to get butter beans as the smaller ones got a little overcooked. And my garlic started burning quickly. I think my Corningware pan got too hot too quickly. Even with all that it’s a good dish and worthy of a second try.

I just reviewed the video to make sure I showed it and probably should have added some voiceover to help point out that the lemon zest goes in with the garlic and herbs, at the 1:41 mark and is cooked down before the beans go in. Sorry I didn’t explain that well enough. I hope you get the chance to try it soon. It is really a yummy way to make the most of those beans! Cheers, Caroline
Linda - Good points about your experience. Actually, I use a cast iron pan that can get pretty hot but just keep that stovetop temperature down and you should be fine. And you’re right about the beans, bigger ones definitely hold their shape or just cook the white beans for less time but I think part of the magic of the recipe is that the beans absorb so much more flavor. And BTW, if you want to try a white bean recipe, I recently published another one that uses white beans and is just as tasty, just different!
Next time I’ll add it with the garlic and herbs. It was good at the end too, gave a nice fresh taste. The flavors were so good. Thanks for replying. Very much enjoying your channel.

If the beans were fresh rather than jarred you would have gone to heaven. Ki grow my own and boy do they taste like cheese.
