I made this for the second time in a month because I was craving it!! Even the picky teenage boy loved it! I did tweek the recipe for what I had, I used 156ml of tomato paste and a large can of diced tomatoes. I also couldn't get chives so I used green onions instead and it still tasted great! Made a large pot so perfect for batch cooking or a large family. Thank you for this recipe! I hope to try more recipes soon!!
HI Jennifer! You sound so much like me. I throw whatever I’ve got into the mix frequently. These kinds of recipes are so forgiving that you can pretty much use whatever is on hand. Sometimes I struggle with actually writing up or planning recipes because I’m pretty much of a “as it goes” kind of cook. The more you experiment, the more you make it your own and that, for sure, is the best recipe of all! Cheers, Caroline

Thanks for participating in the conversation The full ingredients are listed in the video description and I use large brown because they are grown locally and I can get them really fresh but any larger lentil will do. Hi Wendy. I totally agree about tomato paste. I buy it in a squeeze tube when I can find it because it’s alot easier to use and not waste the extra in the can but I guess it can be frozen too as another option. I use brown ones because that’s what my little grocer offers in bulk and fresh, but I think it would be really nice to do a mix actually, so go for whatever you prefer (although I find the red to be softer) and I hope you enjoy it. Absolutely, Angela. I love green lentils too, I just happened to have these brown ones from the local market who has a local source and they are quite fresh. You might want to keep your eye on them though regarding cooking time as they could be ready sooner if they are smaller. I’m not familiat with the ingredients you mentioned so I can’t advise on them, but maybe there is someone who lives in your area who could make a suggestion. Sure, tomato sauce will do. Just add a little more and maybe cook it down a bit first to get that jammy taste that comes from the intensity of tomato paste. Either way, it will be tasty and I can confirm it...it's what I had for lunch today! Cheers, Caroline

Hey Stella, here’s a little suggestion that might solve that problem. You can soak lebtils or beans overnight, discard the water and rinse them in fresh water a couple of times which will reduce that problem. I usually change the soaking water twice over the course of 8 hours if I am going to cook them for dinner. Hope it helps! Cheers, Caroline

Rather than using parchment paper, you could use a lid to a smaller pan, avoiding waste! Just tried it, it worked great. Thanks for the recipe!
