Super Easy ‘Elegant’ Dinner

I used to make Risotto the ‘old fashioned’ way by adding hot broth a cup at a time…
But times have changed and this is a super quick, easy & elegant dinner!
Super Easy Bacon & Pea Risotto (ummmm you had me at bacon) 🤣 with a side of seared sea scallops.
Recipe:
-Put about 15 sea scallops in milk
-Cook about 6/7 slices of bacon. Chop Bacon & set aside. Set pan aside for later.
-Next finely chop one onion. Heat 3 turns of olive oil and 2 Tablespoons of butter.
-Sauté onion with S&P about 7 minutes,or until lightly browned.
-Add 1-1/2 cups Arborio Rice. Cook 1-2 min. more
-Then add 32oz Chicken broth
-Bring to a boil, then cover & reduce heat to low for about 15 minutes
-Remove cover and add 1 cup frozen peas
-Note: If mixture is dry, add more broth or water, a 1/2 cup at a time to desired consistency
-Add chopped bacon
-Empty bacon grease into a jar and use that pan to cook the scallops
-Dry scallops and add to hot pan, cooking 3-4 minutes per side. Season with S&P
-Add about 1/4 cup grated or shredded Parmesan cheese to Risotto
-Plate Risotto & Scallops
-Serve with a salad for a simple elegant dinner
-Enjoy

Every italians aire cursing at your risoto technique. Brown your arborio rise for more nutty flavor first, Add the chicken broth/wine little at a time until cook aldente and creamy. finish with lots of parmesan.
😆I know, I know !! As I said - this was a SUPER quick version! I have made "Traditional Risotto" which is equally delish...but takes a little longer & some patience! Definitely finish with lots of Parm!!
