    I've been a fan Rick since i was watching you on PBS couch surfing like a broke loser, you helped to teach me how to cook for myself along with some others. I consider myself a pretty decent home chef and your salsa verde is my go to and i've spread it across the internet like wild fire. You've raised your daughter right she's obviously also been inspired by you. Much respect from Houston.

    La salsa de chile de árbol también se puede hacer con cacahuate frito y molido, se vacía la salsa ya licuada a la sartén donde se fueron los chiles, ajos y cacahuates, para que hierva máximo 3 minutos y listo. Mmmm.... 😋😋😋😍

    @Valerie Torres it must be crema. Casque makes it. Comes in a jar usually next to the Mexican cheeses. Not the same as sour cream.

    I would pay to watch this guy make toast.
    I think I would season the fish its self a bit. Maybe with some blackened redfish magic or seasoned salt. that redfish magic stuff is so good. I tried that stuff his daughter made from the dried peppers in the blender and it burnt my face off. I couldnt taste anything but the peppers so I didnt use that . I also use club soda in my fish batter it makes the fish coating more fluffy & crispy and you dont get the beer taste.

    Mmm, fish tacos are my favorite. I'm strange, I like mine with grilled fish, no batter coating. Something about the fish, corn tortilla, crunchy cabbage, salsa and crema all together makes for a delicious meal.

    your suppose to spread some mayonnaise on the tortilla the mayonnaise is key brings all the flavors together...the first time my aunt told me I was like really..but I tried it and she was so right... 1 tea spoon will do it..

    A couple questions: What are the pros/cons of dredging the fish in flour first? Also, any opinion on recipes that use an egg in the batter? Thanks!

      It's not necessary. It will mess with the texture. Just make sure your fish fingers are dry.

    Nice, tasty baja style tacos. I make my “crema” with watered down mayo and blended with some smoked chipotle’s,till it’s nice n smooth. Adds a creamy slightly spicy taste to it.

    Rick Bayless' daughter just did MY salsa...with one exception, use olive oil instead of water...and add a dab of strawberry jam...trust me

      its sour cream mixed with a little mayo and a 2 teaspoons of ground black pepper ... well thats how my grandpa makes it and he sells fish tacos in tijuana :)

    I When I had Tacos in Ensenada the fish was not fried, it was steamed. I do not know if was just the place I ate or all of the restaurants.

      Definitely the place you ate at. Most if not all of them are fry battered with fish straight from the ocean and some vendors do the grilled version.
