    Taco Tuesday! I subbed halibut as not a fan of catfish and used the habanero sauce Chef Bayless featured in another episode. I like the heat of habanero straight. Another thing; that yogurt-lime dressing the Chef featured in the past is a great replacement for mayo. It is good on almost anything. One of those things I make every week so we always have it.

    I enjoy these videos. I also learn something new. example would be cutting cilantro and separating stems!

    I doubted roasting garlic this way. Boy am I an idiot. I did cover it and squirt it with water on cast iron after the peppers were done, but man, what a great, deep flavor.

    I throw my extra habaneros in the freezer. They stay viable for months that way.

    you need picante sauce in the mayo, alot more cilantro, and fresh white or red onions. THEN it would be good. and put mango in the habanero garlic mix.
