    Today, I'm going to show you how to make a delicious and healthy carrot cake that you'll want to enjoy any time of the day!
    This recipe is perfect for those who want to indulge in a sweet treat without feeling guilty.

    HEALTHY CARROT CAKE RECIPE
    (makes 12 large or 15 small squares)
    Ingredients:
    1.5 cups ground oats, or oat flour (150g)
    1 cup spelt flour (125g)
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    2 tsp cinnamon
    3 large eggs
    1/3 cup + 2 tbsp maple syrup (100ml)
    1/2 cup unsweetened applesauce (130g)
    2 tbsp melted butter
    1/2 cup Greek yogurt (125g)
    1/2 cup chopped walnuts (65g)
    2 cups grated carrots (250g)
    1.5 cups Greek yogurt, strained (375g)
    1 cup heavy cream (240ml)
    3 tbsp honey
    1 tsp vanilla extract
    NUTRITIONAL INFO (per large square):
    255 calories, fat 11.8g, carb 28.1g, protein 10.4g
    Preparation:
    Preheat the oven to 350F (180C). Line and coat a standard half sheet pan with cooking spray.
    In a large mixing bowl, whisk together oat flour, spelt flour, baking powder, baking soda, salt and cinnamon until well combined.
    Add the eggs, maple syrup, applesauce, melted butter and Greek yogurt into the same bowl of dry ingredients. Whisk until well combined, but avoid over-mixing the batter.
    Stir in the grated carrots and chopped walnuts into the batter.
    Pour the batter into the prepared sheet pan and smooth the top with a spatula.
    Bake the cake for about 25 minutes or until a toothpick inserted into the center comes out clean.
    Remove the cake from the oven and let it cool completely.
    For the frosting, combine strained Greek yogurt, honey and vanilla extract in a mixing bowl. In a separate bowl, beat the heavy cream until stiff peaks form. Gently fold the whipped cream into the Greek yogurt mixture.
    Slice the cooled cake in half to form two layers. Spread a generous amount of frosting over the first layer, and then place the second layer on top. Cover the entire cake with the remaining frosting.
    Chill the cake in the fridge for a few hours or overnight to allow the frosting to set.
    Slice the chilled cake into 12-15 equal pieces and serve.
    Enjoy!

    This is a brilliant recipe! Just dense enough to give me the "hit" I need from just one piece and even my husband, who has quite the sweet tooth loved it. We both like doing sports and it really helps if you can treat yourself to something tasty, filling, healthy and absolutely satisfying that won't break the bank caloriewise. :D So thank you Sasha for yet another brilliant vid! P.S. I didn't have the time to strain the Greek yoghurt, but the one we get here must be thicker than the one you used. Plus, I substituted a yoghurt we have called Skyr for half the amount of Greek yoghurt in the topping. It's just that little bit dryer than the Greek yoghurt and has zero fat and more protein per gram, so it all turned out perfectly.

    I didn't have spelt flour on hand but I did have freshly milled wheat flour so I used that in place of the spelt. I also cheated on the icing and added a half a block of cream cheese, 2 tablespoons of butter, and 2 tablespoons of organic confectioners sugar. I know those icing ingredients completely ruin the concept but I wanted a more somewhat traditional icing. But the rest of the cake I made per the recipe. I would still say even with my small additions, this cake is much healthier than a traditional carrot cake which is so appreciated from someone like me who loves desserts and trying to be healthier. Maybe I can transition to omitting the confectioners sugar someday soon. This cake is wonderful and Im grateful for your recipes and your channel.

    It looks decadent! I love carrot cake and your lemon cheesecake video hooked me as a subscriber then I see this! I have to make this asap. For the wheat flour Im going use freshly milled flour which preserves the fiber and nutrients to make it even more healthy.     Great recipe, just tried it yesterday and am having it for breakfast today :)
    I usually bake just really simple cakes, like banana bread, but this was simple enough even for me despite manipulation with layers and cream.
    I could have cut the maple sirup in the batter a bit as the cream is then sweetened as well.
    Will do that next time - this recipe is definitely going on my roster :)

      Hi Natalia! I use full-fat Greek yogurt all the time, just don't prefer using low-fat dairy. Glad you like the recipe! And talking about the shredded coconut, you can add some instead of oat flour, let's say 1/2 cup.

    Thank you for this wonderful recipe! I look carrots and carrot cakes. But the amount of sugar and oil is just staggering. Is the applesauce a substitute for oil? Can I try to use something else like mashed bananas instead of applesauce, since I can't get my hands on some unsweetened applesauce or puree at the moment?

      I'm sure that'd be fine since apple sauce and banana often have the properties as egg/oil substitutes. Honestly it'd almost be like a mix of carrot cake and banana bread, which sounds delicious.

      Hi Victor! You're so right, regular carrot cakes contain way too much sugar and oil, and I find this recipe just a proper substitute. Instead of applesauce you can also use pumpkin puree, pureed mango or peaches. Hope you'll try out this recipe!

    In Romania we have powdered cream and whipping cream for cakes, u add milk and whisk til become like a meringue.the whole sachet has 7g of fat and less than 250 calories. It's called Krem şanti

      Hi! We also have something similar here in Croatia, and I think these numbers are for 100g prepared cream... and this powder also includes some ingredients I don't actually prefer using like high fructose corn syrup and palm oil.

      That would be wonderful! Well, for my taste it's just enough sweet, my family agrees too, but you can add an extra tbsp of honey if you want. For spelt flour, you can use rice flour (if looking for gluten free version) or whole wheat flour too.

      Glad you like it! Well, haven't really tried to make this cake without eggs, but you can try using aquafaba, it will add more air to the batter than flax egg.

      Sure, that would be just fine, but if you bake one cake and cut in half horizontally make sure you increase the baking time.

      Don't really use these sugar substitutes, but I think it would work just fine, just increase the amount of applesauce to make it moist enough.

    What’s the point of using oat flour for GF purposes if you just add whole wheat flour later?

      I know, I don't really use it for GF purposes, but because of overall nutrition and the fact I enjoy oat flour the most.

      ikr and also.... use greek yogurt for less fat , then adds heavy cream. I conceptually like the idea of substitution to reduce / eliminate 'undesirables' but he sometimes contradicts himself

      @@nomi395 i mean putting Greek yogurt in heavy cream seems okay to make it less calorie dense, but with gluten it's different. Something is either gonna be gluten free or it's not. Gluten is only dangerous and unhealthy to a certain group of people, so why use half gluten free flour and half not? Gluten free just seems like a filler word to make sth look healthier

      I think he was just mentioning that he likes the fact that oat flour is gluten-free. If you watch other videos, you’ll see that he’s a big fan of oat flour and uses it in almost all of his baked goods. Brown rice flour is a great substitute if you want it to be totally gluten-free!

      Hi, you're right, it sounds a bit confusing, I should put it in other way, just missed that one. Anyway, one of the reasons I'm in love with oat flour is that we can use it for making a gluten free recipes, this particular recipe is not really gluten free, but it can be easily transformed by not using this spelt flour, which I add just to imporove the texture of the cake. Hope you'll try out this recipe.

    What's the point to use oat flour because it's gluten free and then use spelt which has gluten? This means you are not gluten intolerant,why should you avoid gluten if you are not intolerant to begin with? These "healthy" recipes doesn't make any sense,these people don't know what they are talking about
