That omelet looks very tasty. But I appreciate what you said about it being not necessarily better than an American diner omelet, just a different style. It kind of wears on me after a while hearing that everything I do and love is inferior to someone else’s version.
Great technique but I like to pull the edges in (low slow heat) and leave top liquid then fold over to set a minute (heat off) and slide on plate. Cast iron pan with lots of butter!!
It’s the omelette you get in good cafes in Paris. It is very difficult to cook! He makes it look super easy but in fact it is very tricky.
