i feel like they introduced a lot of techs too early. Why was bunny hopping in the beginner lobby? I'm halfway through expert and still haven't had to use it. Mid air supers were in the intermediate gym and i don't remember needing those yet either.

Bunny hops are just a way of conserving momentum. The way they demonstrated it in the gym is slightly overkill but the general idea is conveyed. If you do a small jump after any action that gives you speed that is technically considered a bhop. They aren't hard to execute
I mean yeah they are really easy, you just spam jump in most cases, of course like the other people say its gets much harder when you have to do it while dashing but yes, I would say that its really easy to do.
Maddy passes a trigger that removes her dash, but for some reason her hair stays red until she touches the trigger that gives her back the dash. I suspect it's a bug, as the mapmakers probably didn't expect people to dash in that room.

Very true. Bhopping gym was by far the hardest thing in the whole beginner lobby :) I've only seen them required in Glyph for now.
The hardest thing in the Beginner lobby is the Starjump gold speedberry time. Bhop gym section is a close second.

Depends what you're going for. I chose to route the entire thing, for the viewer's experience :)
