Sahlab and Mastic, which is actually called Mastic Gum are very inexpensive. We make this at my house during the Summer, and it's not that labor intensive. They're making LARGE amount of it, so that's why it's labor intensive. I grew up making this

Quinmael Vodevil Exactly my thoughts! When they showed the prices in the beginning I thought it was expensive, but after seeing how labor intensive the process is and the lengths they have to go every single day, from sun up to sun down, along with the ingredients they use, I didn’t think it was so expensive anymore. I would never pay that much for regular ice cream, but this is clearly *nothing* like regular ice cream. I wish they were closer to where I live! I’m dying to try it now! It looks absolutely incredible! ☺️

I want to clarify something, Booza is a Middle Eastern dessert, which was originated in Damascus, Syria. In Arabic, “Booza” means ice cream!!! And for the people who are saying it’s Turkish, they are wrong. So basically, The Ottoman Empire conquered Bilad al Sham; which is (Syria, Lebanon, Palestine, and Jordan) and conquered part of Europe ( Albania, Serbia, Romania, Bulgaria, Greece, Macedonia, Hungary, and etc.). It even took control part of Arabia and a good amount of the North African Coastal strip, and Egypt. The Ottoman Empire was an incredible Islamic Empire, and the strongest Empire in history!! But unfortunately it ended. Overall, the arab countries were under the rule of the Ottoman Empire, so if any country created their popular foods or drinks, it would later attribute to the Ottoman Empire (since these countries were under their rule). And for your information as for Arab cuisine, it is one the first in the Arab world, from Damascus to Baghdad because the Abbasid dynasty historically was hundreds of years before the Ottoman Empire!!! That’s why the Turks took a lot from the Arab cuisine and so they exchanged food ( that explains why some food is very similar to one another). Now we know the secret of the Turkish cuisine’s popularity, is due to the existence of their great country united with other great countries.

"Booza" is the Arabic word for ice-cream. The word is written like this "بوظة". The stretchy texture of the ice-cream is made through the powder called "Sahlab". It contains starch and other ingredients which I don't know, since we also make hot drinks out of it in winter.
Thia type of ice-cream is the best. I've been eating it since I was a child, and it's really nice to see it being shared with people from different cultures so they can experience it.

This is the type of ice cream people are used to eating in Arabic countries at least several decades ago. I grew up enjoying it as a child. It's only when I came to the western world that I had to try the regular ice cream which I never enjoyed like the stretchy ice cream. It doesn't make me feel like I'm eating actual ice cream. "Booza" actually came from the Levantian word for ice cream. I really miss it!

It was in Turkey that I learned about this ice cream. The Turkish ice cream vendors are so funny! I can't wait to go back to Turkey for the 3rd time! Love the country but especially the people. And of course, food.

So they made 500 pounds and they only sold like 10 pounds by looking at the leftover bowls 😂

John Cena then they said they were going to do it all over again, so they will make another 500 pound the next day, which is crazy if they are only selling about 10 pounds a day

I love this and it seems really cool, but I always have trouble understanding how businesses like this make money, like, how much stretchy ice cream you gotta sell to make enough to buy $3000 buckets of vanilla, all the other hundreds of ingredients they use. Pay the bills, pay employees. I'm sure it works because here they are but jeez depending on how expensive it is they probably sell a crap load of ice cream 😂

It’s New York. Everything’s busy as all heck and expensive, but with a unique product they can charge a lot for it.

A small cup is $5.25 and a X-large is $8.25. I imagine they do sell quite a lot since they're making 500 pounds of it, I think they can easily recuperate the costs
