This "Snow Rabbit" is a personal favorite wagashi, appropriately melted chocolate made filling, the round, rolly body, red gem like eyes... so cute that even I feel it's a shame to eat. - Ingredient - Chocolate Filling: Valrhona Guanaja 70% Chocolate Beans 80g Lima Beans Paste Filling 200g Wrapping: Water 60g Top-grade Rice Flour 30g Castor Sugar 60g Potato Starch 6g Glutinous Rice Flour 9g Jelly: Agar Powder 1.2g Water 50g Sugar 66g Red Food Colouring - Appropriate amount Other: Light Blue Nerikiri (no English term) - Small amount Green Nerikiri - Small amount Potato Starch - Appropriate amount - Instruction - 1. Chop up chocolate chips, melt in water bath to 45*-50*. 2. Place in ice water while mixing until temperature dropped and chocolate thickens (about 27*-29*). 3. Place chocolate back in water bath till about 31*-32*, then pour into preheated Lima Bean Paste of 29*-30* and combine for use later. 4. Mix thoroughly Glutinous Rice Flour with water, add into Top-grade Rice Flour, Potato Starch, Castor Sugar mixture. 5. Pour into cheese cloth line mold, steam on high heat for 20 minutes, then cool before using. 6. Mix Agar Powder with water, turn on small fire and stir until thoroughly melted. 7. Add in sugar and cook until 102*, then turn off fire. Add in appropriate red food colouring. 8. Use chopsticks or other tools to pick up the gelatin, make tiny droplets on a cooking plate, then chill for use. 9. Take out a small piece of Light Blue Nerikiri, wrap around the chocolate filling. 10. Take 20g of Step 5 outer wrapping ingredient, wrap over Step 9 filling, dust with Potato Starch. 11. Place the leaf ears made from the Green Nerikiri and use a knife to sculpt the leaf midrib. 12. Place red gelatin eyes made in Step 8 into position. Finished. (This wagashi level is slightly harder. A certain degree of basics is suggested before attempting.)

Wrap in plastic wrap and refrigerate to use later. (It is important to heat up the white bean paste as well; if you don't, the chocolate might solidify in the paste and not incorporate correctly) Outer layer 4、Combine the rice flour and water until no clumps remain, after which add the rest of the outer layer ingredients. Mix to combine. 5、Pour the mixture onto a wooden mold with some cloth on it, and steam on high for around 20 minutes. Set aside to cool. The eyes 6、Mix the Agar powder with water, and heat the mixture on low heat , mixing until the Agar has completely dissolved. 7、Add sugar and heat up to 102 degrees Celsius, and color the mixture red with red food coloring (gel) 8、Using a chopstick, dip the tip of it into the mixture and dot it on a clean baking sheet to make similarly sized dots. Refrigerate until ready to use. Assembly 9、Take a small amount of blue Nerikiri, and wrap up a ball of chocolate filling with it. 10、Wrap 20 grams of the outer layer dough around the filling, and coat the resulting ball in Potato Starch. Shape said ball into an egg shape. 11、Use the green Nerikiri to form leaf like ears for the rabbit. Use a knife to gently carve in the details on the leaf. 12、Place the eyes on the bunny, and you're done! The guy in the video, Argyi says that this recipe is geared towards a cook who knows the basics of Wagashi making, and might not be very beginner friendly.

有个小提议,因为果子君自己很专业而且做了很久的果子,所以那些材料对你来说可能是非常基础的食材,但是很多观众可能都不知道那些是什么,比如上新粉啊片栗粉白玉粉。。那些,果子君能不能偶尔多说一句那些是什么,比如是糯米的粉?还是什么食材的淀粉?我查了一下其实那些就是粳米马铃薯和糯米做的粉,完全可以用中文解释一句,或者中式食材里有没有一样的东西但名字不一样的或者虽然原材料一样但使用时还是会有差别这种知识,作为观众其实很想知道。你的视频真的很舒服很美,但是可能我有强迫症吧(捂脸)有时看到一半碰到不认识的材料超级想退出去马上查那到底是什么东西(原材料上),有些日语的用词也是,其实如果中文语意里有一样的概念,不妨用中文解释一下?
也许不用每一次都讲,但是偶尔能提及一下这些信息对新来的观众会友好很多呢~

@@YelDohan 谢谢解释~我知道各地食材效果都会不一样,我并不是想找本地替代品,只是我个人会很想知道其他语境中的专有词汇本质上是什么东西吧,比如中文一般是原材料+材质来命名,所以一看就知道是什么东西了(糯米粉,黄豆酱,芝麻糊),但是碰到比如“菱粉”“澄粉”这样的,也会有很多人一下不知道是什么东西,我觉得稍稍提一句对观者而言会更清晰而已
