hello! i know this comment is old but i can help. when you add the filling, make sure it’s at minimum 1/4 inch apart from the edges of the dough. keep the spread of the filling consistent as well.

I use thread to pinch the loaf so it doesnt squash tge "circle" of my bun.
How do you get the dough to roll out so easily?? My dough springs back a lot when rolling, which makes it hard to get a good rectangle.

I must be making my dough wrong. It always wants to shrink back and not roll out evenly.
you just need to rest your dough on the work surface, cover it and let it rest for a further 10 mins, you will find it wont shrink back then.
That's totally normal, it's because of the gluten that you've created in the dough
