    The best wonton I have ever had. Pork shrimp fried wonton. This is the most common filling. Make sure you get the oil temperature right. Double frying it makes it super crispy. You can serve this as a nice appetizer or side dish.

    **INGREDIENTS (30-40 wontons)
    *FOR THE WONTON FILLINGS*
    8 ounces of ground pork
    8 ounces of peeled shrimp
    1/3 cup of minced carrot
    1/4 cup of spring onion
    1/4 cup of cilantro
    1 tbsp of corn starch
    1 tbsp of soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce: geni.us/wABlLXf]
    1 tbsp of oyster sauce [Lee Kum Kee Panda Brand oyster sauce: geni.us/P0u6]
    1 or 2 tsp of ground ginger
    1 tsp of ground garlic
    1 tsp of white pepper [Amazon Link: geni.us/93Id0E]
    1 tsp of sugar
    1 tsp of salt or to taste
    1 egg
    *FOR THE DIPPING SAUCE*
    1 tbsp of soy sauce
    2 tsp of Sichuan hot chili oil
    1 tsp of black vinegar [Zhengjiang black vinegar镇江香醋:geni.us/Bqw98A]
    *OTHERS*
    cornstarch slurry (1 tbsp of water + 1 tbsp of cornstarch)
    Wonton skin
    *HOW TO MAKE WONTONS*
    I am using 2 types of protein today. You can use whatever you want.
    8 ounces of ground pork. Just put that in the blender.
    8 ounces of peeled shrimp. Cut it into the smaller size. Dump in half of it into the blender. Save the other half for later. I just like that you can see and bite the shrimp, feel so good.
    After that we gonna add all the seasoning, 1 tbsp of corn starch, 1 tbsp of soy sauce, 1 tbsp of oyster sauce, 1 to 2 tsp of ground ginger, 1 tsp of ground garlic, 1 tsp of white pepper, 1 tsp of sugar, 1 tsp of salt
    Last, we gonna crack an egg. That will make the filling smooth.
    Blend that together. Transfer it into a big bowl.
    Add 1/4 cup of spring onion, 1/4 cup of cilantro and 1/3 cup of minced carrot.
    Mix them well. You can cook a small amount of the filling in the microwave and taste it see if you need to adjust. After you sure about the taste you can wrap your wonton. I make this many times so I know it is good.
    Make the slurry as a glue(1 tbsp of water + 1 tbsp of cornstarch). This will make sure you wonton is safe, they not gonna be open during cooking.
    Put some filling on the skin, don’t put too much, because wonton skin is really thin and easy to break. Then put 1 piece of shrimp on top of it. Dip some slurry on the edge, fold like a triangle. Push out the air out and pack it tight to make sure it won’t open when you deep fry it.
    Make a curve so it is easy to fold. Then you glue the end and pinch them together.
    finish all of them.
    Frying it, get the temperature right and put in your wonton one by one. Push them a little bit just to make sure they are separated.
    After few minutes, all the wontons flow to the top, and you can feel the skin is getting crispy, that is the time you take it out. Let it rest for about 5 minutes.
    We are double frying it. If you get the temperature right, it will literally just take 15 seconds to become golden brown.
    Take it out. And use a paper towel to get rid of the oil.
    Now let’s make the sauce. 1 tbsp of soy sauce, 1 tsp of Chinese black vinegar, 2 tsp of Sichuan hot chili oil. You are done.

      I learned if you want to freeze, I like to do it after the first fry and not do the second before freezing. It gives it a little crust after a few hours in the freezer. Not everyone will approve, it's a french fry trick and very not traditional, lol.

    I made this recipe and it's delicious! I didn't want to deep fry so I shaped them into mini egg-rolls instead of won tons. I put all the shrimp in the food processor and pulsed 3x (chunky texture), removed and put into the bowl and did the rest of the recipe exactly. Big hit and will always have these in our freezer. Thank you!

    This is one of my favorite recipes ! I love to order this dish when we go out to a restaurant . But as you’ve said in other videos you’ve made, “Restaurant ‘s all vary in their interpretation of how they make all their versions of dishes as well as the amount of protein to veggies they mix in and stir fry / serve to the table to share. Whereas, when made at ones home, the home chef is able to double or triple the volume of protein in the dish or just increase everything in the recipe in general , allowing double servings per person. So the advantage is being able to prepare the meal at or in your home, to be able to perform portion control for those dining at whatever particular meal. The other thing I appreciate is her showing us how to not over fill the folded1/2 of the won ton wrappers with small but heaping amounts. Then fold and crimp well around the closed edge. This will assure not only will it it be solidly sealed but if instructions followed correctly , the completed won tons will have a pleated fancy finish to rival any of the best 5 Star Chinese restaurants

    Im making these tonight im super excited to try it. I hope i can get my wonton skins as thin as yours. Made the hot chili oil two days ago and omg it smelled sooo good when you pour in the hot oil. I will continue to make your recipes.     What type of oil did you use? I usually use peanut oil when frying wontons or spring rolls. But I do have another fryer that has canola oil.

      I use soy bean oil. Peanut oil is good too because it has a high smoke point so you don’t get your kitchen full of smoke. Also, the unsaturated fatty acid it has is very stable, doesn’t release bad Chemical elements. So it is healthier compares other types of oil.

    I made these today, but didn't get to cook them. They just took so long to fold. I ended up with almost double enough filling for a single pack of wrappers. So, I'll have to get more tomorrow to finish making these. They sure made the house smell good all day, and that was without even cooking a single one.

    Love your reaction to your own food. My ex you to tell me I was making love to my food only with different words. After divorce she begged be to cook for her even offered to pay. Anyway there was an amazing Chinese Chef at a hotel where I worked. He would fry them up like you then toss in a General Tso style sauce laced with Thai red chilis. He would put it in the window for the waiters and it was like seagulls fighting for a french fry. I am duplicating it today thats why I checked with you as you are an amazing cook!

    I wonder why in restaurants, they can make all parts of the skin golden yellow... everytime i make them, when the middle part is golden, the edges of the skin became an ugly brown colour XD

      You can use white vinegar to replace the acid but the smell will be completely different.

      I have read about substitute of black vinegar...
      1 part balsamic
      1 part rice wine vinegar
      3 parts water
      Or
      equal parts rice vinegar and balsamic vinegar works well enough. Also heard of using balsamic vinegar with a splash of Worcestershire sauce.
      Or
      use a good rice vinegar and a little soy.
      Or
      substitute equal amounts of rice vinegar and Worchestershire sauce
      So so lost !! That black vinegar must have a unique taste 😳😎

    I remember as a a kid watching the people at the Chinese restaurants making these by hand on one of the tables. It looked like such hard work, and I'm sure they hated it.

      I worked in a Chinese restaurant as a teenager, and while they didn't teach me to make them, I wish they would have. Also, they didn't seem to hate it, it was a family business, they were really nice people, and made really great food, Wish I'd have paid more attention, I wouldn't be here trying to replicate it!!!!

    If you let the oil get hot enough in the beginning instead of being inpatient - you wouldn’t need to double fry it.

      Me too but
      1) the lack of slurry to glue the won ton was where I was getting fails .
      2) the double fry so they looked golden.
      Yumm .. learning to cook better!

      Joseph Inhiding ..To make the slurry jus put water n wheat flour into a bowl mix n there u go ...

    Te rog din suflet pregătește și intestine sint curioasa cum se face intestine burta umplută dar nu știu cu ce îmi place cum arată intestinele pregătite dar nu știu cum sa pregătesc 🙏🙏🙏😘
