Translated in Spanish, pico de gallo literally means “beak of rooster.” Some believe this is because it was originally eaten by pinching between the thumb and finger, making the shape of a rooster’s beak.

You know Kent, I had actually made chicken burrito bowls last night. My mom was driving home from a long road trip to Atlanta and I wanted her to relax so I made homemade pico, dried black beans, homemade Spanish rice, grilled corn and of course the star of the show the grilled chicken. It’s her favorite dish that I make and this close to Mother’s Day I wanted to make her feel special. I combine the leftovers and we all have our own taco salad the next day too

Pico de gallo is mexican slang depending on where you are from it can mean roosters beak or a rooster pecking you or the ground at food. If you have ever seen chickens pecking and shaking plants, insects, lizards or whatever they are after. They grab it and shake it into small peices then eat it. And its also a salsa with the colors of the Mexican bandera.
LOL! You pronounce "gallo" correctly as a Spanish-speaker would but "pollo" like an Italian! This made my day! Love the channel
pico de gallo, according to an abuela I met in San Juan 20 years or so ago, means "rooster pecked", which is how you know how fine to dice the veggies. She ran a little place where I could get a good supper -- pollo asado, arroz de cilantro, frijoles negros y tortillas frescas -- for less than $5. Addictively tasty!

That fiesta platter is so colorful! I'd be proud to serve this platter at any get-together. Pico de gallo is so easy to make, but man, sooo good!. And BTW, I love cilantro, though my sister always told me it tasted "soapy". I grow it in my garden every year, so I can pick just the right little amounts fresh for my cooking.

Hello Kent. Mexican here. I use cilantro all the time and yes you're right...there's something with genetics where some people find that it tastes like soap. Pico de gallo does mean rooster's beak, because it looks like something a rooster would peck at.

YUMMO! also, remember, if/when you buy boneless thighs from the store, they almost always have some bone bits or parts of the knuckles in them, so, inspect each one first and cut those out. you have to feel them as its not always easy to see.
Glad to see corn tortillas for the tacos. Corn tortillas just taste so much better than four tortillas.
We been making pollo Amado for years, but If we're feeling lazy, we're fortunate to have several large Hispanic supermarkets near us in Arizona and I go in and grab several pounds of marinated thighs. They always toss several cups of the marinade in the bag so they'll keep marinating till we toss them on the grill. Haul out the fresh tortillas and we're off to the races.
Geez, I can almost smell the chicken & it is making me hungry, lol. Hope to see y'all at Wagons for Warriors this year. Have a Blessed day. Love how the Pups were standing around the grill just waiting for something to hit the ground.

Kent - This was incredible chicken. Your instructions about bringing the chicken tonroom temp and then warming off flame were geniius. The chicken was incredibly tender. The intense citrus salt and mexican spices were a party on the palate. This is a keeper. Well done and thanks to you Shan and the dogs!

Don't know if there is any truth in it, but I've heard that if you think cilantro tastes like soap, use dried cilantro. I agree, chicken thighs are the way to go because they don't dry out as easily as the chicken breast. I wish I could eat the hot peppers, but I am so allergic to them. I feel I'm missing out on so much. Thank you for sharing your wealth of cooking knowledge. I love watching you cook. The pups are so much fun. The videos wouldn't be the same without them. Solid work here. I'm in Phoenix and often enjoy Mexican dining... Pollo Asada or even Carne Asada (diced steak), both are very flavorful, whether served as tacos/quesadillas/or on plates with rice & beans. I didn't mind the commercial for the digital thermometer, only because food safety and proper cooking should be addressed by every chef... good to point out the safe grilling temps and make everyone aware of them. One of the great advantages of watching your videos is for us that grew up with no exposure to real Mexican recipes and dishes to see the options. Your creativity and offerings create a whole new adventure, not sure about the dances. Still looks like cowboy hoofin. Got a Chef's Temp, but they need to put the various temps on the unit.
There are so many variables and variations for good food. Proper food temps are different than “the recommended” food temp. I prefer thighs, wings, and legs at closer to 200°, rather than the recommended 165°.
Kent, I was glad to see this post, because I HOPE that means you and your wife were not hit with the storms that devastated Oklahoma a day or three back.

The way we make pico de gallo is the same. But we add avocado. Diced avocado. Then the seed we add that as well. Supposedly it keeps the avocado from turning brown.

I'm from California but now live in Mexicali Mexico which is right on the border with California and the Capital city of Baja California and that quesadilla here is called a "sincronizada" meaning synchronized because you have two tortillas like a grilled cheese sandwich as apposed to one folded tortilla with cheese like a taco, anyway that food looked really good and I'm going to make some later today, probably not as good but edible.

The double Ls are pronounced like a “y”. You said it correctly when said pico de “gallo”. Same thing for pollo. And yes, pico de gallo, literally translates as a rooster point or beak, inferring, that it has a bite. Love your videos.
