    ✹ Taco-Spiced Tofu & Beans ✹
    -1 block firm or extra-firm tofu, pressed
    -1 can beans of choice, drained and rinsed
    -1 small onion, diced
    -2-4 cloves garlic, minced
    -1 red or green bell pepper, diced
    -2-3 tablespoons taco seasoning (to preference)
    -optional add-ins: canned mild green chilis, canned chipotle peppers in adobo
    In a nonstick skillet over medium-high heat, sauté onion for about a minute. Crumble in pressed tofu and continue to cook, stirring occasionally, until tofu is golden brown.
    Add in garlic and bell pepper and sauté for another 2-3 minutes.
    Stir in drained beans and add taco seasoning. Add in a splash of water if needed to coat the ingredients with the taco seasoning. Taste and add more taco seasoning if needed. Also adjust salt and pepper.
    ✹ Easy Vegan Cashew Cheese ✹
    -1 cup raw cashews, soaked in hot water for 30+ minutes
    -3/4 cup water (add more if needed)
    -1 tsp onion powder
    -1/2 tsp garlic powder
    -1/2 tsp paprika
    -3 tablespoons nutritional yeast
    -1 tablespoon lemon juice
    -1/2 teaspoon salt (more to preference)
    -optional: nacho jalapeños
    Blend all ingredients except for the nacho jalapeños until smooth. Add in extra water 1 tbsp at a time if needed to get everything moving in the blender. Taste and adjust salt and lemon juice to preference. Add in jalapeños and pulse the blender a few times to chop. Enjoy!

    A tofu tip for beginners (that I honestly learned way too late): Your tofu won't stick to your pan if you preheat your pan and oil to medium high/high (depending on how hot your burners get) before adding tofu! If it's sticking, your pan isn't hot enough yet!

    If you leave out all the oil from the recipes and water-saute instead of using oil there, you can easily make these already vegan recipes into healthy versions (WFPB no oil). Great show!

    I havent made cashew cheese in so long! I need to make it again, it's really good. And that is coming from a non vegan. I did vegetarian for two years and it definitely opened my eyes. I love to try all kinds of food. And I especially like to try recreating them at home. Love the idea of recreating your favorite takeout meal.🌻

    nice recipes 😊 stroganoff is one of my go tos. I use mushroom broth and the trader Joe's mushroom powder along with vegan worchester sauce. I use corn starch sometimes which would be good to make it gf. and I serve it with fettuccine I break up to be kinda like egg noodles which my family appreciates lol. also this is one of the only youtube ads I've seen that I've actually wanted 😅 you sold that chili crisp hard.

    I’ve used tofu a few times over this past year, but I never need the entire package. What I don’t eat typically goes to waste. I saw in another one of your videos that in Kroger it’s sold I half containers. If I can’t find that, what are some ways to store unused unpressed tofu? Thanks for the great content.     If u hold off putting the salt in until the mushrooms brown, u will get a more meaty feel to the mushrooms.

    My recipe for vegan stroganoff:
    Vegetable Stroganoff
    Butter and/or oil
    1 medium red onion, chopped
    2 or 3 carrots, chopped in quartered rounds
    1 red pepper, chopped
    8 oz. sliced baby Portobello mushrooms
    Garlic
    Pinch cayenne
    smoked paprika
    2 to 3 teaspoons flour
    1 heaping teaspoon Dijon
    ½ cup vegetable broth
    Sherry
    Salt and freshly ground black pepper
    Cream or almond milk
    Sour cream
    ½ bunch parsley, chopped
    Cook onion, carrot, and pepper separately until caramelized then remove from pan.
    Cook mushrooms until most moisture gone and remove from pan.
    Add garlic and cook a minute or two.
    Add Cayenne and paprika and cook a minute.
    Return vegetables and mushrooms to the pan.
    Sprinkle with flour and cook a few minutes.
    Add broth, Dijon, and sherry and cook until thickened.
    Add cream and sour cream and continue to cook but do not boil.
    Add salt and pepper.
    Taste and correct seasonings.
    Add parsley and stir.
    Serve over rice or linguine.

    When I first went vegan I was certainly not using a blender for any meal lol. Things like baked potatoes, rice, canned beans, or throwing together things like veggie burgers and bread or pasta and tomato sauce... I never actually cooked before I went vegan (I was 13)
