INGREDIENTS
3 cups (709 ml) water
3 to 4 cinnamon sticks
10 to 12 allspice berries
20 whole cloves
4 1/2 oz (130 g) piloncillo (or dark brown sugar)
1/8 to 1/4 tsp salt
(3) 12 oz (350 ml) cans of evaporated milk
8 oz (227 g) unsweetened baking chocolate
8 oz (227 g) semi-sweetened baking chocolate
14 oz (396 g) sweetened condensed milk
1 Tbsp (15 ml) vanilla extract

Yum! Lucky for me, where I live, I can easily get authentic Mexican chocolate. :)
My grandma ma would add a ball of cheddar cheese, shaped in a ball, and export soda crackers before bed. And at the end, the melted cheese at the bottom of the cup could be scooped up with the crackers...

What would you use amount wise for cinnamon allspice and cloves if it’s ground??
biting into cloves really is a strong taste so i assume even ground wouldnt really be a good idea...maybe try to get the whole version? either way a few table spoons? comparing it to what she uses here in the vid
What is the difference between Mexican vanilla extract and just plain vanilla extract?
In my opinion, it has a sweeter taste to it, slightly different from " regular vanilla " I think regular would work find in this but it's also fun to try new things.
You can use the spice bundle several times, don't have to only use once...take out after 10 minutes simmer water...

Probably be Really good with a Little Chipotle pepper, Guajillo pepper, Or even a touch of Bhut Jolokia(Ghost Pepper), though NGL the base recipe is making me crave something fierce as I had an iteration about maybe 21 years ago(shame I did not ask for the recipe) and I STILL Taste it to this day(but strictly as a memory). May post a video of my own If I somehow re-create the exact recipe I had tasted all those years ago(seriously it blew my mind to bits, reshaped it, and blew it again as I was originally a Swiss Miss Hot Chocolate devotee and fully not Hispanic heritage. If Anything could change opinion after only one sip(even though I finished the whole cup) it’d be that one recipe I had the honor of trying). Sorry for complicated text as even now I still struggle to put down how trying the beverage changed my life for the better and I have Lots to say about it.

What's the difference between American vanilla extract compared to Mexican?
