Look good as i am Thai chef,may i reccomend another way of Thai cooking is more like this Step by step - oil with curry paste - add up coconut milk until boiled - add meat as you prefer When cook then add VG - add more salt or fish sauce,sugar,chichen Knor Powder wait until boiled - add cafir lime leave This is authentic Thai cuisine for more than 200 years,no master what you cook for..if mention THAI Curries,then step and procedure are importance for a good teste and aroma. Massaman,Paneng,Green curry,Red Curry,Kari curry Or Yellow curry
I just done this recipe, and it was yummy! I did a few changes thou: 2 instead of 3 spoons fish sauce and sugar, perhaps even just one and half if you want to reduce the sugar and for those who are not too fan of the fish sauce flavour. I didn't have the red colouring seeds so I added a teaspoon of tomato paste (impossible to taste at the end but gives it that inviting redish colour) kaffir leaves and lemon grass from those lil jars you can get from the supermarket and touch of lemon zest too👌👌👌 i didn't have fresh coriander but that's for next time

Not needed but it gives it that umami flavor that other ingredients don’t have. You can just use salt instead! I forgot to mention but squeezing a little lemon in the curry makes a huuuuuuge difference

I always get nervous when my coconut milk looks grainy or curdled. Which I know it doesn’t do. Is it have to do with the brand of coconut milk I use?
If you leave it in the fridge, I can see that happening. Should be fine to consume though if it is before the expiration date and doesn't smell bad
Coconut milk will separate if you cook it on high heat. It won’t affect the flavor but may not look as good aesthetically.

I dont have lime leaves but I use lime zest and it comes close. It makes boxed japanese curry so much better.
