Oh Wow Thank you Flo and Dude!! Our local restaurant serves with baby red potatoes and wow so yummy since it is hard for me to eat rice! I am so excited to make this!
I also prefer a thicker sauce for a curry, especially a Thai curry. I probably would have even gone slightly thicker. That looks super delicious! Dude has the best job being the taste tester! You were absolutely right about chopping meat into bite size pieces. My husband Could easily eat a 500g steak no worries. One night I sliced it up and served it to both of us. There were plenty of leftovers! I'm in Australia and my town (4 hours west of Sydney) has 3 Thai places. 2 are ok, one is a bit better. Sydney has some great places! I had to spend a few weeks in Sydney a few years ago and I had take out every night. I couldn't get enough! The Thai was insane (as was the Indian, the Croatian, the Greek, the Italian, you name it). Best Thai curries I've ever had.
The really weak curry paste is probably Thai kitchen brand. I used it the first time I made red curry and it wasn’t very good. I tried Mae Ploy later and it was delicious. Unfortunately Thai kitchen is the one you find in most non-Asian grocery stores.
yes, arroy-d and mae-ploy are far better than Thai kitchen! I've used Maesri as well but it's not quite as good. You can definitely order the others online!
Pro tip: call a Thai restaurant to get the leaves. I couldn’t find it at the Asian mart (99 ranch, 1 smaller Thai mart or even Berkeley Bowl in California). Also learned they are available at wholefoods in jars (also sold out at my location).
I have my own little bush. My friends living in warmer neighborhoods have giantic ones. They grow like a lime tree. I bought one for a friend at Costco.

What would you suggest for someone like me who has a lower spice tolerance but still want flavor in the curry? Use less curry paste but same amount of the other ingredients? This looks delicious but Thai food is always too spicy for me. Another great recipe!
Yes… decrease the amount of curry paste and keep other ingredients the same. You will have to experiment to get it to the right amount that suits you. You might want to try Thai yellow curry, as it is a bit milder. Avoid green curry as I find it quite a bit spicier. And eating with rice lessens the spiciness. Hope that helps.
At my local thai restaurant i usually order panang curry which is kinda pale yellow but the stores local to me only have red or green paste :( need to figure out how to make the panang curry or maybe its the same red paste??? Bc ive been craving it! Even more now thanks to tjis video 😂
Really, Karla?!!! Have you tried my laksa recipe or Portuguese chicken? Those recipes have a “curry” element to it. If you like those flavours, I think you’ll really enjoy this Thai red curry. Thai yellow curry is also a good place to start. I find Thai green curry much more spicy and I don’t like it as much. Hope you’ll give it a try. 😊
Really never tried! Alot of my coworkers at the casino talk about green or yellow curry! All I know is that's spicy. I usually try to stay away from spice. I did attempt to make Curry in a Hurry once but it came out really weird and I tossed it!
😆 Well… yes, if you are adverse to spiciness, I get that. I’m not a huge fan of spicy either but sometimes it works! My understanding is Thai Kitchen brand is quite common and usually available in regular supermarkets. It is probably geared towards a more Western palate and not so strong. Might want to try that brand and see? Or maybe sneak a bite from your coworkers. 😉 (Thai yellow curry is a more mild curry.)
