I cooked Green Curry today and implemented two tricks Pailin showed in this vid: i) reduce the coconut milk at the beginning and ii) use some chicken stock instead of water to enrich the taste. Well, the curry turned out to be aromatic, full-bodied in flavour, and great in texture. I am proud to say that my curry was quite close to an authentic Thai Green Curry 😎. I've made this recipe at least 7-8 times since discovering it back in September. It's really a perfect green curry for me, but I only use half as much curry paste hahaha. Everyone I've given it to has said it's on par with resturaunt green curry. You're a life saver.
In fact, the word "Sweet" in แกงเขียวหวาน (Sweet Green Curry) is not about the taste but defines how "green" of the curry. The perfect colour of this dish must be a mild (sweet) green, not too vivid, by the combination of green herbs, green chilli, and coconut milk. By the way, she does show us how the authentic Thai Green Curry should be.
Canned or bottled bamboo shoots can sometimes smell really strong! What I would do is boil them in a pot of water for 5 minutes or so to remove that smell.

I just made my first ever Thai green curry. I mostly followed this recipe and used pork fillet instead of chicken. I had no basil leaves or lime leaves but found finely chopped basil at the supermarket. OMFG, It turned out as good or better than curries I've had at restaurants. thankyou Pailin. I can now eat my favourite dish when I'm miles away from any Thai restaurant in my truck out in the outback.🤩😋

Actually Thai food is not that healthy because we use many salty stuff and a lot of ingredients such as sauce and sugar. But if u compared to junk foods yes, it healthier.
Made this today with onion and carrot. I cooked the carrot and onion in water for 8 minutes first because they took longer to cook. I then used the same water as soup to cook the curry. Delicious.

Pailin, I want to thank you for the recipe for this dish. I haven’t had Thai food in so long because I can’t find a good restaurant that serves it. Having said that, I gather the ingredients and put it all together in one pan, outside in the deck celebrating spring! I had to make a couple of adjustments because my grocery store didn’t carry bamboo shoots (used water chestnuts for the texture) and no kafir lime leaves (replaced with lime juice and zest). This was soooo good, I ate 2 bowls and I will eat the rest over the weekend. One thing that just took it straight to a really good Thai restaurant was the basil. That liquorice note made it spectacular. I love it! Thank you, again!

So i made this recipe twice. The first time i used chicken breast and only 1TB fish sauce. The chicken came out to dry but the curry was perfect. The second time i used chicken thigh and had to add 2.5 TB fish sauce and it turned out amazing. Definitely my go to Thai curry recipe!

Made this today and it was terrific! I had some rotisserie chicken on hand, so tossed that in at the same time as the veggies. In my experience, Pailin's recipes are always good and she does a great job of explaining the details about ingredients, method of preparation, and so on. I love Thai food . .the main reason being the few similarities Thai cooking have with keralite cooking(South Indian) we also prepare green curry but it's cilantro and green chilli paste used . Coconut is an integral part of our cuisine too. . Coconut milk and coconut paste is added to both vegetarian and non vegetarian dishes . . Thai food is my ultimate comfort food . Oh my god girl!!!!! I made this last night and I was so impressed! Both my husband and I agreed it was WAY better than we get at the Thai restaurant. I used store bought curry paste (from my local Asian grocery) and I didn't have enough Thai basil to make mine the pretty green shown in the video (so no picture), but the taste was awesome. I will definitely do this again. I think I will even try to make my own curry paste. With your instructions, it should be foolproof. Thanks so much for the video and keep the recipes coming. Made this vegan style with tofu instead of chicken and soy sauce instead of fish sauce. Used broccoli, red bell peppers, and cane sugar instead of palm sugar. It still turned out so good with your recipe 😃 that my husband and I ate atleast 3 servings each. Thank You!

I made this for the first time tonight, it's phenomenal. The palm sugar and fish sauce make a world of difference. This is my go to recipe for Thai green curry from now on.
I cooked a Vegetarian version of this today. I included Tofu, Egg Plant, Squash, Bell Peppers, and Sweet Potatoes. It turned out really well. I tweaked the amount of Curry from a Tablespoon to a little more than a Teaspoon and the flavor balanced much better!
@@shivangipatel2698 I'd recommend vegetable or mushroom broth and marinate the tofu in soy sauce before adding it just like the chicken. If you don't mind oil, frying or sauteeing the tofu after marinating it and before adding it to the pot would make it even tastier

I've made this 6 or 8 times but never with Bamboo shoots. Always use egg plant. Today I added shitake mushrooms, peas, carrots and bell peppers (didn't have any spur chilies). Tripled the green curry paste & zinged it up with ground ginger and crushed garlic. Swapped the palm sugar for honey. And you just have to have a beer while you're cooking--it makes the curry super delicious!

Having never made a Thai dish and only one yellow curry dish before, I have to praise this dish and Pailin for her tutorial. This recipe was a 10/10. Simple, delicious and spicy, but not too spicy to where I was not enjoying. I sure was sweating tho! The flavors and aroma are wonderful. Two notes: a comment below says to boil the bamboo shoots for 5 minutes to get rid of the stinkiness (do this) and my coconut milk did not fully separate but became very thick. If you have never made curry before, I promise you that this is an easy recipe to satisfy your appetite for sicy!
This recipe was recommended to us by a friend who grew up in Thailand. We couldn't believe how simple the instructions were and how delicious it turned out! We used moose meat, instead of chicken (because that's what's available to us); it tasted just like what we've bought at our local Thai restaurant in the past. I have made dozens of green curry recipes. This one is by far my go-to. Easy, and gives the restaurant taste I was looking for. Reduced coconut milk is the key.
Green curry outside of Thailand is too sweet, unbelievable sweet, unlike the authentic recipe which is seasoned more on the salty side. The first flavour when tasting the original green curry is saltiness follow by sweetness and of course spicy-ness. Though its name stated the word "waan(หวาน)", meaning "sweet", but the word does not describe the flavours of the curry, instead this "sweet" word is there to describe the look, the colour of it, how sweet the green colour is, so soft and gentle, so clean and fresh, not too bright, not too dark - เขียวหวาน หวานนวล น่ากิน.
I agree. When i went yo Thailand i was shocked when i tasted my first green curry, i thought something was wrong with it as it lacked sweetness. But all other curries from different places tasted pretty much the same, salty without much sweetness. I fell in love with it and i get depressed when making green curry at home as paste is too salty and requires so much sugar, it ends up tasting just like crappy restaurant ones which are sweet. Im yet to come across a video or a real authentic recipie. I don't want sweetness. I want the true Thai flavour. I find adding so much sugar is disrespectful to Thai culture and cuisine. Ive heard Asians abroad add sugar to their dishes because they heard white people like sweet things. No, we don't unless they are in a desert. Most "white" people/foreigners know Asian food by tasting it in restaurants, but if restaurants use sugar thats all we know. But visiting Asian countries is quite an eye opener as they use 90% less sugar in their dishes... its a shame they aren't proud of their cuisine and stick with original recipies. One Indian restaurant i went to put half a kg of sugar into their butter chiken, i asked why its so sweet, he said its because they heard white people like sugar. Most ridiculous thing I've heard. Most foreigners want *authentic* dishes. Needless to say they lose business and won't see me back spending my money on crappy sweet dishes. Quite depressing, having hundreds of asian restaurants in my city but all are caked up with unnecessary sugar.
you're great @khing m even most of the thai poeple know that "sweet" from the green curry name in Thai means sweet in flavour but really it's just a shade of green as you knew (Green Curry in Thai called "Gaeng Keaw Waan" Geang = soup with curry / Keaw = Green / Waan = sweet or 'a shade of green'

Now you know you can't buy home cooked how about stop complaining and do something to help yourself Find Thai and indian friends....ask them for their ingredients (every family has a family masala)...ask them for their actual receipe ...and maybe a cooking lesson to help bring your meals to life ! Don't starve...learn to cook authentic

Thai food is always very healthy, delicious, and comforting with its coconut curry bases. I've been to Thailand and enjoyed the food all throughout!

I used chicken breast with her adapted version and it was sensational! (The chicken goes in later so it doesn’t overcook.)

@@ericwilson4250 This is an authentic Thai recipe. So Jamie may have learnt it somewhere. Palin is 100% authentic and shows traditional Thai food recipes in her videos. She does recommend substitutes so that everyone around the globe can make it.
Made this today and it was terrific! I had some rotisserie chicken on hand, so tossed that in at the same time as the veggies. In my experience, Pailin's recipes are always good and she does a great job of explaining the details about ingredients, method of preparation, and so on. If you're here wondering if you should try this, the answer is YES!

I love Thai food . .the main reason being the few similarities Thai cooking have with keralite cooking(South Indian) we also prepare green curry but it's cilantro and green chilli paste used . Coconut is an integral part of our cuisine too. . Coconut milk and coconut paste is added to both vegetarian and non vegetarian dishes . . Thai food is my ultimate comfort food . Thank you for this wonderful recipe.

Made Thai green curry this morning using bottled curry paste, but I added crushed lemon grass, coriander seeds and basil to enhance the flavor of the curry paste, and it tastes really good

Oh my god girl!!!!! I made this last night and I was so impressed! Both my husband and I agreed it was WAY better than we get at the Thai restaurant. I used store bought curry paste (from my local Asian grocery) and I didn't have enough Thai basil to make mine the pretty green shown in the video (so no picture), but the taste was awesome. I will definitely do this again. I think I will even try to make my own curry paste. With your instructions, it should be foolproof. Thanks so much for the video and keep the recipes coming. Also, I love how you teach us what the Thai names of various dishes mean. I have been fearful of trying some of the things on the menu, but you make it easy to choose.
Made this vegan style with tofu instead of chicken and soy sauce instead of fish sauce. Used broccoli, red bell peppers, and cane sugar instead of palm sugar. It still turned out so good with your recipe 😃 that my husband and I ate atleast 3 servings each. Thank You!

I made this for the first time tonight, it's phenomenal. The palm sugar and fish sauce make a world of difference. This is my go to recipe for Thai green curry from now on.
I cooked a Vegetarian version of this today. I included Tofu, Egg Plant, Squash, Bell Peppers, and Sweet Potatoes. It turned out really well. I tweaked the amount of Curry from a Tablespoon to a little more than a Teaspoon and the flavor balanced much better!
What did you use instead of the chicken broth? And how did you cook the tofu?
@@shivangipatel2698 I'd recommend vegetable or mushroom broth and marinate the tofu in soy sauce before adding it just like the chicken. If you don't mind oil, frying or sauteeing the tofu after marinating it and before adding it to the pot would make it even tastier

I've made this 6 or 8 times but never with Bamboo shoots. Always use egg plant. Today I added shitake mushrooms, peas, carrots and bell peppers (didn't have any spur chilies). Tripled the green curry paste & zinged it up with ground ginger and crushed garlic. Swapped the palm sugar for honey. And you just have to have a beer while you're cooking--it makes the curry super delicious!

Having never made a Thai dish and only one yellow curry dish before, I have to praise this dish and Pailin for her tutorial. This recipe was a 10/10. Simple, delicious and spicy, but not too spicy to where I was not enjoying. I sure was sweating tho! The flavors and aroma are wonderful. Two notes: a comment below says to boil the bamboo shoots for 5 minutes to get rid of the stinkiness (do this) and my coconut milk did not fully separate but became very thick. If you have never made curry before, I promise you that this is an easy recipe to satisfy your appetite for sicy!
This recipe was recommended to us by a friend who grew up in Thailand. We couldn't believe how simple the instructions were and how delicious it turned out! We used moose meat, instead of chicken (because that's what's available to us); it tasted just like what we've bought at our local Thai restaurant in the past. Thai basil grows really well. I grew a plant last summer and dried the leaves and put them in a mason jar. Pick the leaves before they turn purple.

I gotta say I’ve been seeing a lot of recipes for this that are mostly consistent with each other (but with some different things to add), and I couldn’t understand why my green curry was so flavorless until I watched this video. The fish sauce and sugar for me were critical in achieving that “Thai green curry” taste so I thank you very much for your guidance!

I have made dozens of green curry recipes. This one is by far my go-to. Easy, and gives the restaurant taste I was looking for. Reduced coconut milk is the key.

Green curry outside of Thailand is too sweet, unbelievable sweet, unlike the authentic recipe which is seasoned more on the salty side. The first flavour when tasting the original green curry is saltiness follow by sweetness and of course spicy-ness. Though its name stated the word "waan(หวาน)", meaning "sweet", but the word does not describe the flavours of the curry, instead this "sweet" word is there to describe the look, the colour of it, how sweet the green colour is, so soft and gentle, so clean and fresh, not too bright, not too dark - เขียวหวาน หวานนวล น่ากิน.
I agree. When i went yo Thailand i was shocked when i tasted my first green curry, i thought something was wrong with it as it lacked sweetness. But all other curries from different places tasted pretty much the same, salty without much sweetness. I fell in love with it and i get depressed when making green curry at home as paste is too salty and requires so much sugar, it ends up tasting just like crappy restaurant ones which are sweet. Im yet to come across a video or a real authentic recipie. I don't want sweetness. I want the true Thai flavour. I find adding so much sugar is disrespectful to Thai culture and cuisine. Ive heard Asians abroad add sugar to their dishes because they heard white people like sweet things. No, we don't unless they are in a desert. Most "white" people/foreigners know Asian food by tasting it in restaurants, but if restaurants use sugar thats all we know. But visiting Asian countries is quite an eye opener as they use 90% less sugar in their dishes... its a shame they aren't proud of their cuisine and stick with original recipies. One Indian restaurant i went to put half a kg of sugar into their butter chiken, i asked why its so sweet, he said its because they heard white people like sugar. Most ridiculous thing I've heard. Most foreigners want *authentic* dishes. Needless to say they lose business and won't see me back spending my money on crappy sweet dishes. Quite depressing, having hundreds of asian restaurants in my city but all are caked up with unnecessary sugar.
Adding extra sugar is honestly the least bastardizing thing that can happen to dishes
you're great @khing m even most of the thai poeple know that "sweet" from the green curry name in Thai means sweet in flavour but really it's just a shade of green as you knew (Green Curry in Thai called "Gaeng Keaw Waan" Geang = soup with curry / Keaw = Green / Waan = sweet or 'a shade of green'

Now you know you can't buy home cooked how about stop complaining and do something to help yourself
Find Thai and indian friends....ask them for their ingredients (every family has a family masala)...ask them for their actual receipe ...and maybe a cooking lesson to help bring your meals to life !
