These were amazing! Found this recipe tonight bc I had a lot of zucchini I needed to use and all the ingredients to make them. So good. My husband loved them too.
I love your recipes. I did some tweaking on this one cuz I'm not a fan of chickpeas. I switched it out for quinoa powder. Then I wanted a stronger zucchini taste so i omitted the carrots and bell pepper and just did 4 1/2 cups of zucchini. Then I replaced the onion with green onions. Now its perfect for me. ❤❤
Where do you get quinoa powder? Do you blend up quinoa?

Just made this -absolutely delicious !!crispy on the outside and soft on the inside. Ringing out the zucchini is the key!!!
Thank you for the recipe! My sister is vegan & 90% of the time I eat plant based (vegan) but I do eat eggs (my friend's farm eggs). Mostly when I cook I will include my sister (in my mind) for what I am making. So I always share what I make on the weekends. Unless I'm feeling lazy & want to cook quick. I got so much squash & zucchini I definitely can share all around. I'll let you know how it turns out. Instead of carrot I will use sweet potato & Kabocha squash.
Absolutely loved these. My oven died while pre-heating so had to dry fry them - a bit more labor intensive than I hoped but well worth it.

I have made these three times already, and I have zuccs in the fridge for more. Tip for others: Don't use silicon mat for baking; you'll be soaking them to clean up. Instead, parchment paper works very well.
Thank you for sharing your version of "Pakora". We have been making vegan baked "Pakora" for years. We love using sweet potatoes and lacinato kale. We use all sorts of mixed veggies. When veggies are getting old, we put them in the food processor and scoop with small ice cream scoop and flatten a little. Add some jalapeno and they make great taco's. We have even flavored Lebanese and made Gyro's with vegan Taziki. The ways to serve these are endless.

Two of my neighbours, in their retirement,
have started growing tomatoes and zucchini
and we are now on our third batch
of gifted zucchini
and we have a "Grillparty"
(communal BBQ) coming up so
I think I will make these for the Grillparty
along with my 3-2-1 bean-rice-oat burgers
to give people a flavour of whole food plant based eating
I think with different seasonings
these could easily be Indian style pakoras / bhajis

One of my most favourite foods is corn fritters. Bought from a local takeaway store, they were always virtually dripping in grease. Havent had any since i went low fat whole food. So of course im making yours! TONIGHT!
And of course i'll be adding CORN KERNALS! I'm so excited at the idea of them, but without all the grease! YAY!

Added this to my Vegan recipes board on Pinterest. Thank you! I don't have zucchini right now, but I do have beets and carrots that I shredded for a salad. I also have all of the other ingredients in the house. Worth a try with the beets.

@@wholefoodplantbasedcookingshow We just had this with the beets instead of zucchini for dinner. They are terrific. Very burger-like. My Husband says he thinks he prefers this with beets to doing it with zucchini.
Beets' water content is like carrots. So, I didn't have to squeeze any liquid out. Saves a step of work.
Other than the beet substitute, I made it as you recommended. I always have flax ground together with chia in the house (half and half). My Husband eats some every day. He fell a couple of times and I read that this combination helps with that for some reason. Since he's been eating the ground flax and chia he hasn't fallen. It's also my go-to egg substitute. I didn't mix it with water as I usually do for an egg substitute, just put it right in as you did. The patties came out very well held together. Very satisfying, very filling as you said. I used the chick pea flour and corn starch just as you recommended.
My Husband isn't wild about dill. So, I didn't put the dill in the mixture. I sprinkled dill on the coconut sour cream that I served these with.
This is real down-home, comfort food. Maybe not for a holiday or get-together, but a really good weekday recipe. I'd like to try this with the zucchini, which I do like.
I really like your channel. We seem to have similar tastes and I appreciate the easy-to-do of the recipes too.
I love this recipe!! I made zucchini fritters last night with just shredded zucchini and falafel mix - which is also chickpea flour plus several of the spices you used. And they were delicious - but didn't hold together well - so I was looking for vegan ideas to make them stick together better - and found this - and your site!! I'm so excited!!

What's great about this recipe (or any other) is you can make the recipe to suit your taste and experiment with different seasonings and ingredients! I too love the flavor of smoked paprika, but, I'd also have to add some chili powder, garlic and 1/2 tsp of liquid smoke for a southwest flavor. So many options with your recipe Jill. Thank you so much for making and sharing your recipe and tutorial.

Hi Jill, I tried your Zucchini Fritters today and they came out good. I need a little practice is making them look as good as yours did but the taste was great. I did not have the spring Onion so I substituted a Shallot and added 4 cloves of finely diced Garlic. I will make it again.
The fritters look great ,I use chia egg instead ,works great 👍

Yes "pakoras" are made with vegetables bound with besan which is the chick pea flour. Great going with the tweaks!. This is a tweaked version of a pakora. Baking is a better option than frying for sure! Glad indian food which has always been leaps and bounds ahead in vegetarian eating habits being appreciated world over.

Made these for lunch today for my husband and I and two guests. Here's our review. They were easy to make. Wringing the zucchini was the hardest part. I combined the wet ingreds in one bowl; the dry ingreds in a separate bowl - then combined them together, formed and baked as per recipe. I plated them next to a large salad, some baked potato fries, and three sauce options: the vegan ranch, a vegan Tzatzki, and a side of ketchup. We found the fritters just a little too bland. They came out exactly as described: crispy on the outside and perfect on the inside. But we kind of all thought they needed "something". We couldn't figure out what. In the end, we kind of all agreed that the missing component, for "us," was maybe garlic. I do thank you so much for the recipe and all your hard work at reaching a finished product and we are not knocking it at all - they just needed a little kick for us. Thank you again.

I made them today, as per recipe with a very few miniscule tweaks, but we tho't they needed way less turmeric, dump the smoked paprika, & add a bit of salt (or more aminos), I noticed another commenter saying to use the parchment instead of silpat for clean-up reasons, & I think she's right. Doubt I'd ever make them again. We've been eating homemade vegan food for over 40+ yrs (90+ together, lol) & would rethink the spices added to this one.
If, like another commenter, we're gifted with extra garden zucchini, I'd probably use salt, garlic, dill and nothing else, for a try. We're not gluten intolerant so I'd sub whole wheat & soy flour for the besan flour.
But we've tried several of your dessert recipes & have really enjoyed your style. You're a beautiful person all around. Thx for helping others with the whole food/ plant based diet. It's an improvement over any other diet. 💜 Blessings.
I commented 2wks ago & just wanted to add that I cut the leftover fritters into small chunks & added half to a casserole that calls for a good bit of turmeric (I cut it in half this time), and froze the other half of the chunks & added them last week as a pizza topping & we both luv'd it.

I was recently diagnosed with Hashimoto's disease, a thyroid autoimmune disease. I'm always looking for recipes for make ahead snacks and this looks great!! I can't have bell pepper, tomatoes or black pepper and will have to substitute Coconut aminos for Bragg aminos and arrowroot, tapioca or cassava flour for the chickpea flour.
I will experiment and let you know which is best. There are millions of people now with some kind of autoimmune disease that need gluten free as well as these other restrictions. Thank you so much for this great idea!

This is a very well known Turkish cuisine plus the ingredients donot have carrot and red pepper but fresh onion and dill and zukkini some put regular onion and spice is salt and pepper that is so simple and one egg. We eat top with yougurt and this a side dish perfectly done in deep fry but I began preparing as you do on oven papper or I've got miniature pancake making pan all teflon and steel beneath without olive oil perfectly done

Thank you, Jill. Trying these today. I'm using yellow and green squash since I have both to use up. So delighted to find plant based fat-free. Instead of Braggs, im going to try coconut aminos. That and smoked paprika are my favorite spices also! We really need a good bread recipe that's gluten-free. I can't stand any of the gf breads our there.

These are great! Not a fan of ranch, so I have used hummus & tzatziki sauce. Also, tried them with tomato, mustard & mayo. Kids thought they were burgers.

Another yummmy recipe, Yay! I'll see what flour I have on hand, but I know I have not stocked chickpea flour.
I blend raw dry chickpeas in the dry container of my Vitamix with tamper try 1c. at a time. I forgot to use tamper and with 2c of chickpeas there were some pieces that didn’t blend well, I sieved the hunks out.

People with gluten allergies can try einkorn or kamut flour (ancient grains) . See the book Grain by Grain by Bob Quinn. Many people are able to use this wheat flour without side effects of modern wheat.

Which low carb flour do you suggest? One cup of chickpea flour is 53 grams of Carbs. Also high is carbs are both arrowroot flour and cornstarch. IF I was able to find a nice low carb version of this that would be awesome. The shredded carrots I would reduce to 1/2 or maybe even 1/4 cup (again carbs). So any suggestions to turn this into a low carb Zucchini Fritters dish would be welcome. Thank you.
We don't avoid carbs in this way of eating.

Did you see the website's lentil breads (cooked like pancakes)? And, Oh gosh, I recently started making sweet potato & oatmeal flatbreads. Just those 2 ingredients mixed and the result is fabulous (google it). Not the potato pancakes you are looking for, but geez they're easy, filling and delicious. Add seasonings to your taste once you've got the system down.

Not completely sure but I think almond flour would work better. Oat flour tends to leave the inside a bit gummy.
