- If you have zucchini at home, make this delicious and easy recipe! This zucchini recipe is really better than pizza! My family and friends love zucchini very much and I often make zucchini recipes. 🧑🍳Cooking tips:
❗Before grinding the zucchini it’s enough to cut just one end of it. Grab zucchini uncut end and start grinding the cut end. Ones you finish you will have the uncut end in your hand so this way you will not lose the last slice 😊
❗For the topping you can use the vegetables you like, for example mushrooms, bell pepper etc.

🥣Ingredients :
1 large zucchini
1/4tsp salt
1 tomato
4tbsp gram flour
10g parsley
1 garlic clove
1tsp onion flakes
1 cup fresh spinach
plant-based mozzarella cheese
olive oil
🥣Method:
Grate 1 zucchini.
Season with 1/4tsp of salt.
Mix well and set aside for 10 minutes.
Cut 1 tomato into half moon slices.
Squeeze grated zucchini over a bowl to remove excess water.
Transfer the mixture into a mixing bowl.
Add 4tbsp gram flour.
Chop 10g fresh parsley and 1 garlic clove and add to zucchini mixture.
Mix in 1tsp onion flakes.
Add salt to taste.
Stir well until all the ingredients are combined.
Transfer the mixture into a greased frying pan and spread out into a circle.
Fry on a low heat covered with a lid for about 7 minutes or until the bottom is crispy brown.
Flip it gently to other side.
Then add topping. I used 1 cup fresh spinach and tomato.
Add grated plant-based dairy free mozzarella cheese.
Fry for another 5 minutes.
Sprinkle with fresh chopped parsley and chilli flakes.
Serve immediately and enjoy!😊

A lovely vegan recipe! I would naturally add at least 5 cloves of garlic 🤣🤣🤣I also think I would add nutritional yeast, and cut down on the vegan cheeze, we dont get great ones here.

Hello Gracie! Here in UK where I live we have just a few brands making vegan mozzarella (I know just 3 brands) available in stores and I tried all of them, they all good. Hi, it really looks very tempting, too make it little more crispy just add two tblspn of rice flour, if don't have it just take raw rice grind them in spice grinder, corn or arrowroot starch , too squeeze water from zucchini use cheese cloth it'll be more easier and drink the water it cools off our body, istead of red lentils you can use yellow spilt chickpeas lentils always do add ginger and little black pepper in lentil base recipes easy for for digestion. 👌❤️🌹

Just curious, why do you squeeze the water out of the zucchini right over the bowl so you have to squeeze the rest again? Asking for a friend.

There are vary cooking techniques (chopping, slicing, squeezing 😊, cutting, frying, baking, roasting, air frying etc) and we all do it differently. I am not here to show you how to chop an onion for example and to teach you a particular cooking technique - this channel is not about this. I am here to share delicious, affordable and easy vegan recipes ideas! You can squeeze shredded zucchini as you like, use your best method. I am used to do it the way I show it in my video as it's quick and this is how most of us do it when you do not have much time and need to be quick. Please feel free to use a different technique for squeezing zucchini if you like and share your best practices here in the comments below the video - I am sure it will be appreciated a lot. I think you mean « grating » the zucchini, not grinding. You can grind salt, but you grate zucchini/potatoes/carrots. Thanks for the lovely recipes.

Well I made this today. My crust never got that crispy and kept sticking to pan. I had to cook at least 15 min on one side with no lid to get it crispy enough to take out and it was still a bit gooey . Same when I flipped on other side. Must be the pan, you pan seems to be totally non stick. I can't seem to find pans like that here on the Island. Suggestions on where to go. By the way it was super tasty but not as pretty as yours. Delicious. I added an egg for protein, used garlic powder instead of garlic and replaced 1 tbsp gram flour with semolina to make it crispy. Also added cayenne pepper and nutritional yeast for more flavour
