    Almond Pulp Crackers
    Recipe by: Amanda Berrill

    Cook Time: 30-35 minutes
    Total Time: 45-55 minutes
    DESCRIPTION
    Crackers made from the leftover almond pulp from making homemade almond milk.
    INGREDIENTS
    Nonstick cooking spray, for greasing
    ½ cup almond pulp (leftover from 1 cup raw almonds blended with 4 cups of water and strained)
    1 tablespoon grapeseed oil or neutral oil of choice
    1 tablespoon all-purpose flour
    ½ teaspoon kosher salt
    ½ teaspoon baking powder
    ¼ teaspoon garlic powder
    ¼ teaspoon smoked paprika
    PREPARATION
    Preheat the oven to 325°F (160°C). Grease 2 sheets of parchment paper (at least 8 x 11 inches) with nonstick spray.
    Using a nut milk bag or clean, lint-free kitchen towel, wring out as much liquid as possible from the almond pump.
    In a medium bowl, combine the almond pulp, grapeseed oil, flour, salt, baking powder, garlic powder, and paprika and stir well with a rubber spatula.
    Roll the dough into a ball, then pat down slightly with your hands to flatten.
    Place the flattened dough on one greased sheet of parchment, then place the other sheet of parchment on top, greased side down. Use a rolling pin to roll out the dough into a rectangle about ⅛ inch thick. Peel off the top sheet of parchment.
    Use a pizza cutter to score the dough into 1½-inch square crackers. Use a fork to lightly poke a couple of sets of holes in each cracker.
    Carefully transfer the crackers on the parchment to a baking sheet. Bake for 30-35 minutes, until the crackers are dry and almost completely hardened. Let cool completely, at least 20 minutes; the crackers will continue to crisp slightly as they cool.
    The crackers will keep in an airtight container at room temperature for up to 3 days.

    I absolutely love her.
    I think she would make a WONDERFUL teacher. I would take sustainable type classes from her any day. Also, wouldn’t she be perfect to read children’s books out loud?!?

    Great show! I love this concept as a cooking show and being low-waste (thank you for answering my prayers). My only critique is when you’re crediting who these recipes are from, also show a caption or visual of their name/website and not just verbally crediting them (especially during a blending shot where all I heard was pulverizing ingredients). Other than that I loved this show and I can’t wait to see more episodes!

      If it helps, the links to the Almond Cow recipes, tirimisu and burgers, are in the video description notes. I was not able to find the cracker recipe, but I asked in a comment. Hopefully Auri or Goodful will respond.

    Appreciate the honesty that the other two recipes maybe were trying too hard to cover up what was happening - sounds like the crackers are a winner!

    I often just don't strain my almond milk if it's in baking or sauces etc. Means there's no waste and more nutrition :)

    You really need to blend cashews a while to get them smooth. A high powered blender helps, or just be very patient.

    I think the easiest and most cost effective is the pulp crackers. Add some herbs, and you've got great crackers.

      too many almonds being eaten persistently can lead to kidney stones and an overdose on vitamin E from what I remember. this is aside from the expected constipation and subsequent related issues

      Omg, I 100% agree! I'm in AZ and we have tons of Californians moving here for all kinds of reasons. One being lack of water! Pistachios are even worse! Have you seen the documentary on pistachios? I couldn't believe it! California needs it's water for the people! We're next in AZ... I teach my kids to conserve water! We have to! 🤦‍♀️ I'm sorry, but I don't see many people feeling the same way I do about these crops and the water they need, that steal from the people who should be of more value...

      The problem is people like the Resnicks in California, buying up all the land adjacent to water, and hence holding a monopoly on the water, and not using efficient farming practices, there are so many ways of reducing your water consumption, like with vertical farming. But companies are just not held accountable with destroying our land, planet, and the lives of the many affected people. But watch them go on huge propaganda rants about how the individual needs to change their whole life around, to counter the disaster they are creating.

      Also, look into the amount of water data centers use, they also release propaganda about using gray-water, but it's a laughable 10% for many, while using up the clean water, and exacerbating the droughts.
