Bread Butt Chocolate Cake

DESCRIPTION
A delicate vegan chocolate cake made out of old bread butts!
Note: If your bread is still a bit moist, or has been in the freezer, dry it out in the toaster on medium setting before using.
INGREDIENTS
Nonstick cooking spray, for greasing
1 cup plant-based milk of choice
1 tablespoon apple cider vinegar
3 cups stale bread butts or slices, cut into ¾-inch cubes
⅓ cup cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
2 tablespoons vegetable oil
1 teaspoon vanilla extract
⅔ cup brown sugar
1 tablespoons powdered sugar, for topping
3 strawberries, sliced, for topping
PREPARATION
Preheat the oven to 350°F (180°C). Grease an 8-inch round cake pan with nonstick spray and line with parchment paper.
Add the milk and apple cider vinegar to a large bowl and let sit for 5 minutes.
Add the stale bread cubes, cocoa powder, baking powder, baking soda, and salt to a food processor. Process for 1-2 minutes, until the bread is ground into fine crumbs.
Add the vegetable oil, vanilla, and brown sugar to the bowl with the milk mixture and whisk to combine.
Add the bread crumb mixture to the bowl with the wet ingredients and whisk until combined.
Pour the batter into the prepared cake pan.
Bake the cake for 40-42 minutes, until a toothpick inserted into the center comes out clean. (It is okay if there are slight cracks on top-the cake will be served upside down.)
Let the cake cool in the pan for 20 minutes. Run a knife around the edges to loosen, then place a serving platter upside down over the cake. Flip over, lift off the pan and peel off the parchment paper. Let the cake cool completely, about 1 hour.
Before serving, dust the top of the cake with the powdered sugar and arrange the sliced strawberries in the center. Slice into wedges and serve.

Why does my bread mold, instead of getting stale?
It gets mold when it is preserved in a humid environment. A cloth bag for the bread should help
same. i think bread in the us has chemicals which preserve it that we don’t have here
When air hits bread it gets stale, mold is when it's getting expired

Wait, I thought Ari was a vegan. Why did she use an egg and parm? If she really wanted a no wasted meal, she could’ve omitted the egg🤷🏻♀️
I think she eats mostly plant-based but not 100% of the time. I think these choices stem from her efforts towards being as low-waste as possible.
Egg shells are compostable so it’s not ending up in the landfill which makes it waste free
I think she's vegetarian, not vegan.
I thought she was vegan as well, and while there is good vegan parm, unless they’ve made some amazing strides with vegan eggs since I read about them this week, that was not vegan. The egg might’ve been from a neighbor’s chicken, maybe?

There’s nothing sophisticated about eating chicken ovulations and breast milk. Come on. You know better. So do better!
She still produces WAY less waste than the average human. It’s impossible to be 100% vegan and 100% zero waste all of the time, the most we can do is try our best to do so MOST of the time. It isn’t an all of nothing deal, flexibility is key.
@@ahhhhhhhhh6508 it is not impossible or difficult to be 100% plant based in our diets. Animal agriculture is killing our planet by means of co2/methane. And factory farms are causing pandemics! Stop being selfish because you can’t give up certain foods! The survival of our species depends on us adapting!!
